Chilli Chicken Penne

Calories per serving: 308 kcal

Ingredients
1 red onion, finely chopped
1 garlic clove, crushed
200g skinless chicken breasts, sliced
1 red pepper, deseeded and chopped
1 chilli, sliced
1 x 400g can chopped tomatoes
1 tsp vegetable stock powder
300g fresh penne pasta
1 tbsp chopped fresh parsley

Instructions
1. Heat a non-stick pan, and dry-fry the onion and garlic until soft. Add the chicken, red pepper and chilli, and cook until the chicken is lightly browned. Add the tomatoes and stock powder and simmer for 10 minutes.
2. Meanwhile, cook the pasta in a large pan of boiling water for 4 minutes.
3. Drain the pasta well and transfer to four warmed serving bowls.
4. Stir most of the parsley into the sauce and spoon over the pasta. Sprinkle with the remaining parsley.

This looks yum and I'm going to have it for my dinner tonight, I'm not too sure about the calories though. When I put it all in to myfitnesspal, was more like 400 per portion. Still good though.
