Chocolate Pear Sponge

Low fat cooking spray
410g can pear halves in juice, drained
200g self raising flour
salt
2tbsp cocoa powder
150g castor sugar
100g low fat polyunsaturated margerine
2 medium eggs
100g low fat plain yoghurt

2 tbsp cornflour
1 tbsp cocoa powder
1 tbsp castor sugar
300ml skimmed milk

Preheat the oven Gas 4/180C/Fan 160C. Lightly grease a 23cm diameter ceramic baking dish with low fat cooking spray. Pat the pears dry on kitchen paper and place in the dish, cut side down.
Sift the flour, salt and cocoa into a mixing bowl. Add the sugar, margerine, eggs and yoghurt and beat for 2 minutes using an electric whisk. Add a little water, if needed, to give a mixture that drops easily from a spoon, then spread over the pears,
Bake for 30 minutes or until the sponge is well risen and firm to the touch.
For the sauce - mix the cornflour, cocoa and sugar together in a non stick saucepan. Add a little of the milk to mix a paste, then gradually blend in the remainder. Bring to the boil, stirring continuously and simmer for 2 minutes.
Run a knife around the edge of the baking dish and turn the pudding out on to a large plate, cut into slices and serve with hot chocolate sauce.
