I love cupcakes! Thankfully, I didnt make any for myself!

I wont say what I ate for fear of anyone drooling, but, back on track today.

B/L: 2 oopsie rolls with bacon, egg and cheese
D: coronation chicken with courgette chips
S: Dry roasted peanuts, sf jelly with cream

Morning! My coronation chicken wasnt too great I have to say. I didnt have any cream, so I made it using mayo and phili.

Does anyone have a good low carb recipe? Normally I'd stick sultanas and mango chutney in it, but thats def a no no! lol!

Might go get cream on my way home and try again!
 
The recipe I use is,
1 chicken breast, cooked and cut into strips
1tbsp mayonnaise
1tbsp sour cream
1/8tsp tandoori spice mix or mild curry powder
salt and pepper to taste
good squeeze lemon juice

Not authentic but tastes pretty good and it's about 2 carbs a serving.
 
Do you make it hot? or have it cold?

Coronation Chicken

1 chicken breast, cooked and cut into strips
1tbsp mayonnaise
1tbsp sour cream
1/8tsp tandoori spice mix or mild curry powder
salt and pepper to taste
good squeeze lemon juice

Mix all ingredients together and serve with a mixed salad
 
Mmmmmm coronation chicken will have to try that and I think I'll chop some slightly cooked celery into it to replace the texture if the sultanas xx

Well, I am in love with my new coronation chicken recipe!

Ingredients
Cooked chicken
2tsp masala curry paste
single cream
Spring onions
(optional carbs - 2tsp branston pickle)

I fried the onions in some oil, added the chicken and cooked until the chicken was warm. Then I added the curry paste and the pickle then topped up with the cream.

Can I just say, I was delicious! Curry paste is definitly the way to go!

Without the pickle it'd have been 4g carbs, or 10g with.

I might go post it in the recipe thread actually whilst I'm munching on the leftovers for lunch! :D
 
Hello Claire... Sounds great! I might try - but do you know if I would have to count the sugar content as well as the carb content? I still get confuddled about stuff like that :)
 
I've absolutely no idea! The sugar content is about equal to the carbs, so I'm guessing that just means that all the carbs are from sugar and not from, well, whatever else carbs are! lol!

But thats if you're using the pickle - the carbs to sugar ratio in the pickle is identical.
