Cous Cous cake

Hi there - I seem to remember there's some controversy about whether couscous is free if used as a flour replacement in cake. Or is that only if it's ground or something? Say for example this tasty-looking recipe:


2 cups couscous, washed and steamed
1 cup raisins
1 cup diced apples
3/4 cup water or apple juice
pinch of sea salt
Options: Add a pinch of cinnamon

Wash, drain and steam couscous for 5-7 minutes.
Remove and fluff with chop sticks or a fork while cooking.
Place apples, raisins, water (or juice) and sea salt in a sauce pan.
Bring to a boil.
Reduce flame to low, cover and cook until apples are done. This should take only 2-3 minutes.
Remove and mix with couscous.
Place mixture in a cake pan and spread out evenly.
Cover the pan with a top or foil to hold in moisture.
Allow to cool.
Cut into squares and serve.

You'd have to syn the stewed apple and raisins, but otherwise this ought to be free (if using water, not apple juice) right? I remember trying a recipe that involved mixing in Muller Light (of course) and cooking - it was quite nice.

Oh sorry, ignore me. I just found a massive thread about it after searching a bit more carefully.


Seems so weird you're s'posed to Syn the couscous if it's still cooked as usual. I just don't understand the logic at all. Maybe because it's more densely packed, so you eat more than fluffy savoury couscous. Meh. I might turn a bit of a blind eye....

Because if you were eating cous cous you would normally be having it as part of a main meal alongside free and superfree foods that limit the amount you eat. But in the form of a cake you could easily consume the same amount or even more just as a snack and without the benefits of the other ingredients. So SW say you need to syn the cous cous to protect your calorie intake because it is easy to overconsume as a cake.
