Crab and ginger noodles 350 calories per serving

Serves 4

prep time 5 mins, cooking time 10 mins

250g noodles
low fat cooking spray
a bunch of spring onions
2.5cm fresh ginger peeled and cut into thin slivers
2 garlic cloves crushed
1 red chilli de-seeded and chopped finely
2 x 170g canned crab meat
300g mange-tout or sugar snap peas
4 tablespoon of soy sauce
1 pack of fresh coriander
1 tablespoon peanuts, chopped and toasted in the oven until golden brown


Cook the noodles according to the packet, drain and keep warm.
Spray a large frying pan or wok with the cooking spray and put on a high heat.
Stir fry the spring onions, ginger,garlic and chilli for 1 min.
Add the crab, mange-tout or sugar snaps, noodles and soy sauce.
Stir fry for 2 mins.
Take the pan off the heat, stir in the fresh coriander and serve sprinkled with the peanuts.
