Just do it as normal but without the cream I very rarely use cream or any cream substitute in my curries. I just fry some onion, garlic & ginger until softening, then add the spices for a minute or so, then chuck in the meat/veg, a tin of tomatoes, bit of tomato puree and a stock cube and leave it to cook. Done.
Theres a gazillion curry recipes out there if you google, you usually just have to omit the oil, they're pretty syn-free otherwise.
