The ham and pea fritata in this months mag is very yummy for a
Lunch

Mix Cooked peas, red onion , any colour pepper, 4 eggs, sprig of mint, then frylite until it starts to go 'bouncy' then top with bits of ham and grill in the pan for 5.

Cool then slice, can be eaten cold and kept fine for 3 days.

Hey Chocko, Im in need of some ideas for packed lunches for work! We dont have a microwave so of possible things that can be prepared the day before and can be eaten cold. I hate lunch time- its when I always struggle with plan as I always used to just grab a sandwich/ a pasty :( Any suggestions are much appreciated.

I'm with freakystuff.. Struggle at lunch times.. Get fed up with salad or sandwiches... Started a slimming world group tonight.. And will be coming back here for more recipes. Especially the chorizo ones.. X
 
[h=2]Potato salad - almost syn free[/h]


1lb new potatoes, boiled with the skins on
1 tub of fat free natural yoghurt
1 tbsp low fat salad cream (1 syn but makes a massive bowl so negligable)
1 bunch of spring onions chopped
Salt and pepper
Garlic granules and mustard seeds (add depending on taste)

The leftover yoghurt at the bottom also makes for an amazing dip for crudites :)
A lot of people said it was better than the packaged stuff on the table!

Sorry, Lisa - only just seen your request. What a pain, having no microwave! Anyway, this one's really tasty and packs in some veg too.

TUNA PASTA SALAD - Makes enough for 4 lunch boxes.

1 Syn for the whole recipe

250g cooked, cooled pasta
200g tinned tuna (water or brine), drained
8 quartered cherry tomatoes
1 carrot, grated
3 spring onions, very thinly sliced
Quarter of a cucumber, diced
1 level tbsp. Lighter Than Light mayo - 1 Syn
Quarter tsp. English mustard - negligible

Mix it all together and enjoy! Usually put mine on a few salad leaves. I occasionally add in some sweet-corn and sometimes, a little more mayo (Synned) or FF fromage frais mixed into the mayo . If you're not keen on tuna, you could always shred some cooked chicken into the pasta.

If I have a HEX A to spare, I like this with thin slices of ham and grated cheese stirred through, along with some diced peppers - minus the tuna, of course!! :D
 
SALMON AND BEAN SALAD BOWL - Serves 2

Syn Free

400g can mixed beans, drained
3 tbsp. FF vinaigrette dressing
2 tbsp. chopped fresh parsley
1 x 213g can wild red salmon, drained
150g cherry tomatoes, halved
Half small red onion, finely sliced
175g cucumber, sliced
Salad leaves

Mix the beans with the vinaigrette, parsley and seasoning to taste.
Put in the bottom of two lunch boxes.
Remove the skin and bones from the salmon and lightly flake the flesh, then place on top of the bean mixture.
Top with the tomatoes, onion and cucumber.
Finally, top with the salad leaves. Seal the containers, chill and toss the ingredients together, when ready to eat.
 
CHICKEN AND BACON SALAD - Serves 2

3.5 Syns per serving

2 x skinless, cooked chicken breast fillets
4 rashers of smoked back bacon, all visible fat removed
50g cherry tomatoes, halved
145g watercress, rocket or spinach leaves

For the dressing - 1 tbsp. olive oil - 6 Syns
1 tbsp. red wine vinegar
1 level tsp. wholegrain mustard - 0.5 Syn
Pinch of caster sugar - 0.5 Syn OR use sweetener

Thinly slice the chicken breasts, whilst grilling the bacon until crisp.
Allow the bacon to cool, then snip into small pieces with some kitchen scissors. Add to a bowl, along with the sliced chicken.
Whisk all the dressing ingredients together. Season to taste, with a little salt and black pepper.
Add the tomato halves and salad leaves to the chicken and bacon.
Add the dressing and toss everything together.
Divide between two packed lunch boxes and chill.
 
CRAB AND SWEET CHILLI SALAD - Serves 2

1.5 Syns for the whole recipe

225g cucumber, finely sliced
3 spring onions, thinly sliced
2.5cm piece of fresh ginger, peeled and grated
1 red chilli, deseeded and finely chopped
20g pack of fresh coriander leaves, roughly chopped
1 x can white crabmeat, drained
1 level tbsp. sweet chilli sauce - 1.5 Syns
Zest and juice of 1 lime
Salad leaves

In a bowl, mix together the cucumber, onions, ginger, coriander and crab meat, along with the chilli sauce, lime zest and juice.
Season to taste.
Divide the salad leaves between two packed lunch boxes and top with the crab mixture. Chill before serving.
 
ROAST PEPPER AND PASTA SALAD - Serves 2

4.5 Syns per serving

200g Total 0% Greek Yoghurt
Roasted peppers in brine - amount dependent on taste - Free
100g penne pasta
25g toasted pine nuts - 9 Syns (but worth adding)
50g halved cherry tomatoes
A little finely chopped fresh basil or dill

Cook the pasta according to pack instructions. Drain.
Dry toast the pine nuts in a non-stick frying pan.
Chop the drained roasted peppers from the jar and add to the pasta, along with the tomatoes, pine nuts and basil/dill.
Fold in the yoghurt and season to taste.

Lovely served on a bed of salad leaves and sprinkled with a HEX serving of grated mature Cheddar or topped with HEX diced Feta.

I've just thought, Lisa. One lunch I sometimes take is some cooked and cooled fine noodles, with some sweet chilli sauce (1.5 Syns for 1 level tbsp.) stirred through and with some pre-packed chicken slices (flavoured or plain), sweet-corn, red pepper slices and some finely chopped mange tout mixed in. Sometimes I'll use mayo, instead of sweet chilli dressing but, must admit, that's my favourite. Also, I sometimes take couscous or rice with similar ingredients added. With the rice, I sometimes stir through some egg at the end of the cooking time so it's more like a fried rice from the Chinese.

Hope you can find an alternative to boring lunch-times! I work as a Teaching Assistant in a primary school and we didn't have a microwave either, so we all put two pounds towards buying one and now lunch times are much more interesting, and filling too, with the previous night's dinner on the menu! :D

BRAZILIAN BEAN AND PRAWN FRITTERS WITH HERB SALAD - Serves 4

3 Syns for the whole recipe

400g black-eyed beans, drained
2 cloves of garlic, crushed
4 spring onions, chopped
150g cooked, peeled prawns
100g cooked basmati rice
2 level tbsp. sweet chilli sauce - 3 Syns
2 tbsp. chopped coriander
1 tbsp. white wine vinegar
Bag of baby-leaf herb salad leaves
1 red pepper, deseeded and thinly sliced

In a food processor, blend the beans, garlic and chopped spring onions into a course paste.
Add the prawns and cooked rice and pulse until the prawns are roughly chopped. Season to taste.
Mould the mixture into 12 small burger shapes.
Spray a frying pan well with Frylight and cook in two batches for about 2 minutes on each side or until cooked through and golden brown.
Meanwhile, mix the chilli sauce with the coriander and white wine vinegar and toss together with four handfuls of the salad leaves and the sliced pepper.
Serve as soon as the fritters are heated through.

Especially tasty with HEX Feta cubes on the top.

PORK AND PEPPER BAKE - Serves 4

1.5 Syns per serving

1 tbsp. olive oil - 6 Syns
Smoked paprika
4 large loin pork steaks, all visible fat removed
4 large potatoes, washed and sliced to about 1cm (no need to peel) - Maris Piper are good for roasting
3 peppers of different colours, deseeded and cut into bite-sized chunks
1 large red onion, cut into thin wedges
2 fat cloves of garlic, flattened with the back of a knife
Good pinch of dried oregano
1 lemon, sliced
! few sprigs of thyme

Pre-heat the oven to 200C/Gas 6.
Put the sliced potatoes into a large roasting tin and drizzle with the olive oil.
Season well with salt and black pepper and a good sprinkling of smoked paprika or, to taste.
Using your hands, mix the potatoes and seasoning well with the oil and cook for about 20 minutes in the oven.
Remove from the oven and turn over, adding the peppers, onion and garlic. Season with a little more salt and the oregano.
Spray each pork steak with Frylight, on both sides and sprinkle each steak with a little smoked paprika, coating well.
Add the pork to the tin, on top of the peppers, along with the lemon slices and the sprigs of thyme.
Put back into the oven uncovered and leave to cook for 20 minutes.
Remove from the oven and stir everything around, putting back into the oven for a further 25-30 minutes. This may, obviously vary, according to the thickness of the pork so check carefully that it is thoroughly cooked through before serving.

I sometimes add cherry tomatoes in with this and, if I have any to spare, sprinkle it with grated HEX cheese about 15 minutes prior to serving.

You can, of course, use just Frylight to roast the potatoes, therefore eliminating any Syns, but I find it always cooks better with the oil and, what's 1.5 Syns anyway? :D
