80g (3oz) thai jasmine rice
165g (5 3/4oz)firm tofu,patted dry with kitchen paper then cut into cubes
splash of soy sauce
1/2 tbsp vegetable oil
40g (1 1/2oz) thai red curry paste.
1/2 x 400ml can light coconut milk
1 small red pepper, de seeded and sliced
175g pack baby corn and mangetout
handful of chopped fresh basil or coriander
lime wedges to serve
