Using a marrow/courgette?! My friend at work has brought me in some...they are courgettes but are the same size as a marrow so not sure if they are the same thing...anyway ... at the moment im just roasting them and sprinkling on lots of chilli flavouring but just wandered if anyone did anything different with them as i have rather a lot

awwww i LOVE courgettes!!

my fave way to do them is in a pasta sauce, cut them into small pieces and fry them off with garlic and chilli flakes, then add about 200ml of veg stock and let it reduce, then at the end add 1 tbsp of low fat creme fraiche (1.5syns) and stir it into pasta! its delish and what i had for lunch coincidentally lol

you can also grate it or cut it small and put it in stir frys, put it in a veggie spag bol, you can scoop out the middle and stuff them, put them in curries, i had a courgette fritatta yesterday lol, possibilities are endless! xx

you can also slice them into ribbons with a veg peeler and boil/fry them and have them as a veg with a meal xx

Thanks for the quick response....your pasta idea sounds fab!!! I had one stuffed with curry last week That was good too!! I cant stop picking at my roasted bits though...is it wrong that im eating them cold They taste good!! xx
