Does it matter if I go over 810 calories?

It depends on how much more veg! And on what kind of veg lol. I shouldn't think a little bit more will make all that much difference but half a plateful more, might. Can't see a small amount extra making that much difference to your losses, but try it and see.
I would have thought you'd be ok as long as your extra calories aren't carbs, so extra protein or fat might be ok but veg not so much.
the danger is carbs more than calories - and in that case it's the veg that are the culprits.
