The easiest thing I find is using my slow cooker, try checking out the slow cooker thread at the top of the recipe forum.

Stuff like spag bog, chilli, mushy pea curry (sounds weird but really nice), stirfry and good old quiche and beans are my quick meals. I try to make stuff and freeze it too so I can just take it out of the freezer on the morning.
