EE Potato and chicken salad

    Threw this together for lunch today and it was yummy! Don't have exact measurements though!

    Ingredients:

    Potatoes (any kind)
    Cooked chicken pieces
    Tomatoes (chopped into small pieces)
    Cucumber (chopped in to small pieces)
    Fat free natural yoghurt
    Fat free Italian dressing


    Leave the skin on the potatoes, chop into bitesize pieces and steam for twenty minutes (just before they go soft)

    Meanwhile combine all the other ingredients in a bowl. You can add other raw vegetables too!

    When the potatoes are ready, either leave to cool or run them under cold water.

    Mix them in with the other ingredients and voila, a perfect lunch to take to work!
