Thursday 24th - Extra Easy

Breakfast: Coffee & Toast 1 HEXA, 1 HEXB, 2 syns
Lunch: Roast root & lentil soup 2 syns for paste
Tea: Middle Eastern chicken & apricot stew with bulgur wheat 3.5 syns for apricots
Snacks: Pear, nectarines

Friday 25th - Green

Breakfast: Coffee & Toast 1 HEXA, 1 HEXB, 2 syns
Lunch: Mixed salad 3 syns for dressing, Finn Crisp with Laughing Cow 1 HEXA/B
Tea: Porotos Granados (Chilean squash and bean stew)
Snacks: Nectarines, apple, figs, Muller cheesecake 1 syn

Not as enamoured with this as I expected. It was fine but nothing exciting, just a veggie stew really, not sure what's Chilean about it? Maybe my squash weren't that great, I used several different ones as I have quite a few small ones needed, er, using up :rolleyes: :D The only flavours were the oregano and bay leaf, not enough for me personally.

Home made cheese tonight! Labne, never tried it before! Will I love it or hate it?

Dammit why didnt I think of that before?! :eek: Coulda put some Marmite in it!

That will go on ze lizt... :cool:

Tea: Mujadhara with spicy slow roast tomatoes and labne, with saffron dressing and toasted flaked almonds 1 HEXB for oil and almonds, 1.5 syns for sugar and yoghurt
Snacks: Wine, 38 syns

Well today has been a day of om-nomness!!! :drool:

Started off the night before making my home-made almost-syn-free cheese!!! :eek: - see my Labne thread for details

Then started on my slow-roast tomatoes:

I tried a similar syn free version months back but the recommended settings just didnt work on my temperamental oven and I cremated them in minutes, so I just put it on as low as it would go, used a couple of teaspoons of oil as part of my HEX and checked on it every half hour. Left it about 3h in the end. These were LUSH :drool:

Oh and the dressing - just cos it looks pretty! :D Bit more oil in this as part of my HEX:

Ive just scoffed most of the rest of that cheese! I LOVE it :drool: Gonna make some more today I think. This is definitely gonna be a regular! :) Got some serious Total 2% stocking up to do!
 
Well Ive scoffed the whole lot of that cheese now :eek: So Ive put another one in the fridge with my last bit of Total. trying Garlic and pepper with a touch of lemon zest this time. We'll see what it's like tomorrow! When a trip to Waitrose will be in order for a hell of a lot more Total :rolleyes:

Oh and Im scoffing the leftovers of the mujahadra base, its AMAAZZZZING; so, so filling but so beautifully sweet, I LOVE it :drool: I think its better on its own than with all the roast tomatoes and fancy stuff that were with it last night! So simple but so delicious! Mmmmmmmmm!!! :drool:

I shall be getting back to sw properly after the funeral tomorrow so shall be back to see how to make it all as sounds really yummy.

The labne's in this thread

The tomatoes I did like this:

Ingredients:
- 6 large tomatoes
- 2tsp evo oil (4 syns or part of HEXB)
- 1 1/2 tsp harissa
- 3 cloves garlic
- 2tbsp chopped fresh rosemary
- 2tbsp balsamic vinegar
- 2tsp brown sugar 2 syns

Method:
- Cut tomatoes in half, put in a bowl with the oil, harissa, garlic and rosemary and mix well to coat
- Place cut side up on a foil-covered & Fry light-sprayed tray
- Sprinkle over sugar and vinegar and bake at 100C for about 3h, checking every half hour or so
- Set aside until shortly before ready to eat

The salad I did like this:
Ingredients:
- 2 tsp evo oil (4 syns or part of HEXB)
- 2 medium onions, chopped
- 250g brown lentils
- 150g brown basmati
- 50g spinach, stalks removed
- large bunch parsley, leaves only

Method:
- Fry onions on low heat for 20min until translucent
- Turn up heat and cook for 10min until deeply golden
- Add lentils and 600ml water, cover and simmer for 10min
- Add rice, re-cover and simmer for 20 min
- Remove from heat and leave to steam for 10 min


Then I served the mujahadra salad with the slow roast tomatoes and labneh on top, drizzled it with a dressing made out of balsamic vinegar and oil and a few toasted flaked almonds.


I adapted the recipe from bits I found in Alice Hart's Vegetarian and also ideas from this recipe among others.
 
I also have one in the fridge however didnt have 2% in my local Asda so im giving it a go with the 0% - fingers crossed!!

I need 2% everyone is making your yummy cheese and I can't as I don't have any yoghurt :cry: mind you Erm I have 3 packs of 0% gone out of date in the fridge if I don't remove them soon they will become smelly cheese :giggle: I keep meaning to and keep forgetting :rolleyes:

Slimbysummer did it with Total 0 % and chilli, she said it worked fine :)

Oh, the salt thing, dont put more than 1/2 tsp per 500g in! I used less than a 500g pot and it was purrrr-ettt-ty salty! :rolleyes: Might be OK now its 'cooked' though, will find out at lunch time! :D

I've just ordered the Vegetarian cookbook you mentioned :eek:

That book's fabbo! Pretty complex some of it though so I only use it for w/e's really. Actually its not that complex once youve tried the recipe once, I guess its just when its all new and stuff, you can adapt most stuff to make it a lot easier than they make out :rolleyes:

The BNS falafels were good, the mushroom ban khoai pancakes were FAB! :drool: Various hummus recipes, oh the chana chaat... ! :drool: Ohh and the smoky black bean soup is a regular of mine now! :drool: The carrot & coriander fritters! Yummo!

Ha ha! Yeah I like that book a bit! :D Think Im gonna try the Vietnamese soup next. Got 2 more books coming my way for Xmas (I think... :whistle: ), the HFW River Cottage one and a curry one, so yumtastic New Year coming up! :cool:

Lunch 2: Mixed salad 3 syns for dressing
Tea: Feta stuffed chicken in Parma ham with veggies 1.5 syns for ham, 4.5 syns for cheese
Snacks: Cabbage!!! :eek:

Lunch: Leftover Porotos Granados
Tea: Citrus Black Bean Soup 1 syn for orange juice

Oh I dunno, a few days I should think. I just put it in a bowl or plastic box with some cling film over. Ive eaten it up to 3 days later in the past, but its usually gone pretty quickly :D
