I'm a long term lurker on your thread who feels the need to finally come out of hiding and tell you how awesome your holiday food pictures look!

And your weight loss is fantastic, being 4lb away from losing 10stone is utterly amazing. When I have felt down about my own losses or thought about giving up I have often looked through your diary for inspiration and every time its got me back on track. I switched to Weight Watchers simply filling a couple of months ago but still check out your diary for inspiration as your food is just tasty, healthy food that you can fit into any eating plan.

Just really wanted to say thank you for sharing your food and journey with us.

Sunday 10th June Green

Breakfast: Coffee & toast 1 HEXA 1 HEXB & 3 syns
Lunch: Salad 1 HEXA & 1.5 syns for cheese, 1.5 syns for mustard
Tea: Chicken balti with rice 1 HEXB & 2.5 syns for chicken, 3 syns for oil
Snacks: 2 Babybel Goat's cheese 7 syns

Monday 11th June Green

Breakfast: None
Lunch: Cheese & egg salad 1 HEXA for cheese, 1.5 syns for mustard
Tea: DC's Love soup 1 HEXB for croutons, 3 syns for oil
Snacks: Coffee 1 HEXA, roasted kale, cherries, mini Baybel light 1 HEXB, 3 Alpen Light 9 syns

Tuesday 12th June Green

Breakfast: Coffee & fruit 1 HEXA
Lunch: Leftover soup 2.5 syns for oil & croutons
Tea: Black bean chilli choc soup 1 syn for chocolate
Snacks: roasted kale, some vino ohhhhh 30 syns? :eek:

Hi :) Your roasted kale, is this like the crispy seaweed recipe?? I tried this but it didn't work well, any tips please? x
 
I got it from Vegan4life. I just chuck the lot in a roasting tray, spray liberally with Fry Light and bake for about 10-15min until it's going brown on top. Then sprinkle with a little salt, it's diviiiiiiine :drool:
 
I've been reading your diary from the start and you are an inspiration Erm! You are doing so well and all your food looks delicious ( I may have nicked a recipe or 3!)

Just looked at your total weight lost so far and you have lost the equivalent of me:p Your hard work is definitely paying off.

Hi Erm, I've been lurking on your thread too. You are so inspiring, your food always looks so fabulous and it's even more amazing knowing that you adapt it all to be Slimming World friendly. Thank you so much for taking the time to post it all.

Wednesday 13th June Green

Breakfast: Coffee & fruit 1 HEXA
Lunch: Leftover sauce from chicken balti 1 syn for oil, with Tilda sun dried tomato rice 2.5 syns, & leftover onion bhaji from Sat 8.5 syns
Tea: Good ol' roast veg pasta salad 1 HEXB for Parmesan, 5 syns for prosciutto
Snacks: Quorn slices
