can anyone help me i know i have seen a recipe for falafle in an old s/w mag but have looked through all mine and cant find it! we are having a picknic taster night at class on thursday and i wanted to make some
I have a recipe I use - this is from an old magazine
Falafel
Ingredients:
225g/8oz dried chickpeas 1 onion, peeled & finely chopped 2 gralic cloves, peeled and crushed 2 eggs, beaten 1 tsp ground cumin 1 tsp ground coriander 1 small red chilli, deseeded and finely chopped 1 tbsp chopped coriander 2 tbsp chopped flat leaf parsley ¼ tsp baking powder Salt & freshly ground black pepper Fry Light
To serve: Fat free natural yoghurt flavoured with chopped mint & red chilli
Instructions:
Put the chickpeas in a large saucepan of water, boil for 45 minutes and drain well. Transfer to a food processor and add the onion, garlic, eggs, cumin, ground coriander, chilli & herbs. Process until you have a thick, smooth puree. Add the baking powder and seasoning & stir well. Transfer to a bowl and chill for 1 hour or overnight, if time permits.
When you are ready to cook the falafel, preheat the oven to 220c/Gas 7 and spray a baking tray with fry light. Take small pieces of the pureed chickpea mixture and form into little balls between your hands and then flatten them out slightly and arrange them on the prepared baking sheet.
Cook the falafel in the oven for 12-15 minutes, until crisp and golden. Serve immediately with a bowl of the yoghurt dip.
