I always cut it off before, then theres no temptation to eat it once it is cooked....not much will power me lol
I'm the opposite, i cut the bacon off once i have cooked it. xx
I always remove fat before cooking, otherwise I find the grease from the fat coats all the meat.
But surely if you do this then you might as well have cooked your bacon is lard because it will absorb the fat during cooking?
