Food Porn.......Induction

Hi Raeslim it was a combination of spring onions, garlic, diced peppers, a handful of green beans, cooked in olive oil, sprinkle of curry powder, prawns and spinach. Think I am starting to look like a prawn!!

Dinner tonight. Roast duck breast covered in my curry sauce and boiled egg with a side of cauliflower rice.

Nummy, num, num!

How do you make your curry sauce? Your cauli rice looks like real rice...I haven't tried it as didn't quite believe it but it looks great. Do you microwave it?

Heya skinny, just stuck a recipe of sorts...on my diary page, honda's peepings xx

The cauli rice is so simple, I grate, salt. Cling film and micro for 2 min ish. It's yummy :D

Today's breakfast was eggs baked in avocado with mini sausages and soya cappuccino. image-2470640273.jpg

The avocados were... different! Haha. They weren't altogether unpleasant, but I'm not sure I'd have them again. I like my yolks runny and these weren't. And the avocados lost a lot of flavour after they were cooked. Made a change to scrambled egg and bacon though!

The cappuccino, however, was super delish!
 
Oh mrssimpkin.......they made my stomach turn at the thought :( well done for being brave enought to try them though! Have you made baked eggs? They would be the same but onion and pepper cooked then eggs cracked on top.
 
You've just reminded me, my DH makes a mega-breakfast with smoked salmon, cream & eggs backed in the oven. Really rich and a birthday treat only - but it's Atkins friendly (if you take away the toast that usually comes with it). Will try it over the weekend.

Bad news about the avocados, I was hoping they would be like a hot guacamole for the winter.
 
My dinner tonight:

Salmon fillet baked with butter, lime, garlic & fresh chopped chilli, served with spinach, courgette tagliatelle and mushrooms with a bit of boursin cooked in for a sauce.

Sooo good! Never had spinach before (that I remember) and I love it! Happy days!

I really like baked avocado. We have it with bacon and cheese in the space where the stone was and it's lovely.
 
I've found a new love for omelettes since starting Atkins! I mix mine up in the blender to make it really light and fluffy. My fave is cabbage, bacon and mushes. Yum! In fact, I think I may have one for supper, since I've just bought a lovely big savoy today!

I guess I'm lucky, I've always eaten a lot of veggies and I really love them, so I include some kind of veg or salad in most meals. Though I do miss fruit sometimes. I'm trying to stay on Induction for as long as I can, but I can't wait till I can have some berries with my whipped cream! Hehe. Mmm, blueberry ice cream :D
 
Hi All,

right i just HAD to share this with you!!!! last night i had steak . . . YUM! i needed to start eating more cabbage so this is my way of making it yummy!!

Ingredients
Smoked Bacon
Cabbage
Double Cream
Mayo

Shred the cabbage and cook in boiling water for 4 mins to soften. Cut the bacon into chunk and cook until crispy. In the same pan the bacon was cooked in add some double cream to deglaze the pan, add the drained cabbage to the pan and mix in the bacon and cream until mixed well, to thicken the sauce i added a squirt of mayo stirred and DONE! and then eat! hehe. i've added a photo too! . . . i think i may even have this for my dinner tonight :)

Oh yes! I could eat that! Yummmmmm! I used to do cabbage and bacon and cashew nuts, sure they aren't allowed on induction though :(
 
Mine were super flat.....too eggy for me but I did make pancakes on shrove Tuesday ;)
