Food Porn.......Induction

I warned you the pictures of meals would be on their way! Tonight was chicken croquettes with green buttered veggies. The croquettes are INCREDIBLE .. literally like chicken nuggets!

2 chicken breasts
1 egg
1 tsp paprika
1 tsp chicken seasoning
1 tsp garlic flakes
Salt & Pepper
(mix and match for your own spice combo)

Pulse in food processor until not a liquid but quiet mushy. Put in the fridge for 1 hour. Prepare a heavy frying pan (or deep fat fryer) with oil. Meanwhile use 2 spoons to make "quinelles" of chicken mix. Pop them in the pan when the oil is nice and hot and cook until brown and golden. I checked one in the middle to make sure it was cooked.

They were seriously delicious - you could make chicken tikka bites by adding tikka spice mix & a tablespoon of cream and some dried mint .. trying that next :)

Shepherds pie with cauli mash!

This was so lovely that i wish i had made more than one portion!

RW that looks really nice, will have to give it a bash!

Must have a go of making proper cauli mash, I only do cauli cheese or rice....yummy.

AA I shred my greens and cover with cling film then micro for a couple mins.....add butter and off you go xx

Morning all.......breakfast today.

Parmesan and flaxseed crackers, topped with pâté and a side of mushrooms. I couldn't face bacon eggs and all that jazz this morning!
 
Is there a recipe for the crackers?

Not as such......

Mixed Parmesan and milled flaxseed in equal quantities with salt and pepper, then added a wee touch hot water. This melted the cheese and brought the mixture together.

I then rolled it out thin between two sheets of grease proof, think I should have done it thinner though. Lifted off top sheet and baked at180 for 15 min. Should have flipped it over and toasted the bottom too.

Anyway that's how I made them :D
 
Mmmm .. the crackers and pate look lovely! I spent ages in Sainsburys reading the back of pates and couldn't find any that were low enough for induction .. if you could point me in the direction of a good brussles I would be absolutely thrilled. I LOVE pate! x
 
I just got regular andreas medium course, it's 4.4g per 100g and I had maybe 2tsp on the crackers! It's not induction friendly but I wanted it ;)
 
I have just made shepherds pie only with minced steak, mushrooms, garlic and chilli, and the cauli mash.

It was lovely!!

The cauli mash is divine...........can it be made in bulk and frozen or even kept for a few days does anyone know?

Cauli has a tendency of going quite wet when frozen, though I'm sur if you frozen it in like ice cubes and then kept them in a bag that may help?
 
Late lunch today was steak with cabbage and mushrooms in a creamy garlic sauce. Yummy! I still have to remind myself to chill out and stop feeling guilty about eating all this butter and cream! Haha.

i know what you mean! I had to stop myself picking the skin off my roast chicken legs! Mmmm crispy skin!

I know it's not a thrilling dinner but it was yummy so I had to take a pic......chicken leg portions with salad and a couple cherry toms!
 
Have to say that was the nicest mim so far, 4 tbsp flaxmeal, 3 tsp sweetener, 1tsp baking powder, egg, water, cinnamon, nutmeg, once out of microwave, sliced and toasted, had it buttered, with Philadelphia and handful of blueberries

my stir fry made of leftovers, it was delicious!

leftover chicken scraped off chicken carcass (roughly one breast size)
cabbage
small onion
about a quarter of a courgette
1 slice of bacon chopped finely
garlic
chilli flakes
ginger
soy sauce
fried in around 15g of lard
