L: Huge SF salad with a drizzle of balsamic vinegar, tomatoes, celery and carrot sticks, home made pickled beetroot, made it last year and was saving it for Xmas but we didn't get around to opening it, it's gorgeous and I could quite happily eat the whole jar lol! Home made chick pea and butter bean hummus, 20g black olives 1.5

D: 1/4 lb cheese burger and SW fries (not sure what cheese I'm using yet) HexA(cheese) & HexB( wholemeal roll) salad, tomatoes, slice of bacon :drool: 4 mini macaroons 8

S: Muller yogurt, fruit

Drinks: green tea w/cranberry, water, sf squash, Options orange choc 1.5

Can't wait for my cheeseburger, went to Lakeland yesterday for some poaching pods cos I can't make poached eggs for toffee :D spotted a burger maker so in the basket it went lol! I'm such a sucker for kitchen gadgets! I love Lakeland, wish it wasn't so expensive though :rolleyes: And my fav kitchen shop at Crystal Peaks shut down :(

Oh well, just waiting for His Lordship to finish work and then off to pick some paint and paper for living room :)

Yeah I didn't think it would be that bad lol.
Tonights dinner was gorgeous, would have take a pic of the inside of the burger but I was too busy ramming it in my gob!

Tell me more about the little pretty things in the middle are they mini whoopie pies? Or coloured macaroons? I live in hope that they are some sort of sw miracle pud :p x

No, wish they were cos I would have eaten the box all to myself lol! They are mini macaroons from the freezer section at Lidl. We nipped in earlier as I needed some bread cakes for dinner and I spotted them while hubby was rummaging in the bargain section lol! Haven't updated my syns yet but they workout at 2 syns each, they are filled with coffee, strawberry, pistachio and chocolate fillings, very tasty, had 4 and hubby had 4, there are 12 in a box so there are a few left. Had mine with an espresso, just finished off a perfect dinner :D

Lol! that's just what I said in Lidl! My hubby was laughing cos I was stood by the dessert section with my phone checking the syns of things lol!
 
Nosh For Today

B: Banana and cherry muller light

L: Edam cheese HexA and cucumber sandwich on a wholemeal roll HexB, 2 mandarins and 2 mini macaroons 4

D: Lamb Byriani, raita, tomato and onion salad, vegetable bhajis, mini tub of icecream from Aldi 8

Snacks: 2 vegetable bhajis

Drinks:Ginger and lemon tea, water, sf ginger beer, black coffee

Veg Bhaji recipe Free on EE
Not sure about green or red as I don't do them, but this is a recipe I adapted from an old green recipe I've been making for years, I just keep tweaking it.

1/2 onion chopped
2 or 3 cauliflower florets chopped in to small peices
spinach leaves chopped roughly
60g instant mash powder
2 tbsp homemade hummus or 2 tbsp chickpeas mashed up with 1 tbsp 0% yogurt
1/2 tsp cumin
1/2 tsp turmeric
1/2 tsp ground coriander
1/2 tsp salt
clove of garlic mashed
good pinch of ground black pepper

Pop the cauli and onions in a pan with some water and cook until the onions are softened but the cauli still has some 'bite' to it, you don't want it mushy.

Add the spices, garlic and seasoning to a dish with the instant mash and add enough boiling water to make a stiff consistancy, then mix in the hummus or chickpeas and yogurt.

Strain the veg, add the spinach and then mix them with the mash, you might need to get messy and get your hands in the bowl :)

Divide the mixture into 12 equal portions then roll into balls and flatten into patties. I found dipping my hands into a dish of water each time stopped the mixture sticking to me.

Pop them on a tray liberally sprayed with Frylight into a preheated oven at about 200C for about 40 mins or you could chuck them in a frying pan, I usually turn them half way through cooking, they will go a lovely golden brown colour.

I find they taste better when they have cooled down a bit, plus they're bloomin hot when they come out of the oven. Will be having these for dinner as an accompaniment to go with our byriani(if I can leave them alone long enough!).

They are great for lunch boxes and do freeze, you can use any spices and veg.

Omg, I am soooo making those!! Having a curry tonight they would've been perfect, wish I'd seen this before I went to Tesco lol. Next week I shall make them :) :drool:

If you like spicy things I would add more spices, these were quite mild, you can use any veggies really, even frozen mixed veg works, you just make up the base which is the mash mixture then add anything else you fancy. And I only used the hummus because I made some up yesterday, but the mashed up chickpeas are just as good, and they add some texture. You could even used tinned puy lentils, butter beans or canninelli (sp?) beans I suppose for a change.

Just had them with a lamb byriani, raita and tomato and onion salad, it was gorgeous, I'm so full now. I 'was' going to freeze some of them for another day but there are none left :eek:


The byriani was from the Extra Easy Meals in Minutes, it was lovely, the only thing I would do different is tweak the spices. and I used less lamb and added some chopped cauli and onions, I also added 1/2 block of Raj frozen minced garlic and 1/2 block of frozen minced ginger and used a medium curry powder instead of mild. I think if I hadn't it would have been bland. It was very tasty and smelled very divine while it was cooking.

Not as bad as I thought, stayed the same so happy to have gotten away with it. Had a lovely evening at it'sGCbaby's (Katy's) after WI, she cooked a lovely free dinner, chicken filled with quark and wrapped in bacon with leeks, SW style sliced roasted potatoes, carrots and broccoli and fruit salad and 0% greek yogurt for afters. Then Me and Katy sat looking at dresses and shoes for her wedding and generally being girly and giggly and the boys sat waffling on about Xboxes, phones and other boring man things rofl!

Sorry, by the time I'd eaten and got ready it was about 1.45 then I missed the bus so didn't get to mums till after you had gone.

how great that you have your sister here to encourage you!

those bajhis look great. I love making curries but usually have to go without anything nice like that. I do make syn free mint sauce and these will go really well with them!!
