courgettes, mushrooms, aurbergine, leeks, green peppers, curly kale, spinach, spring onions, asparagus......

Have you read the "So your'e thinking of starting Atkins" thread, there's a list of all the allowable veggies. I have spring greens, savoy cabbage, Pak Choi, choi sum, endives, scallions etc in my fridge

Curly Kale fried in butter till crispy is my fav :) or cauli mash with cream and butter :D

Have a look at lindas low carb meals website, lots of recepies for different veg.
My fav is broccoli and cauli gratin and fried cabbage with cream.

im the same hate all the veg! think im going to change to another diet tbh maybe a vlcd
