gym advice please

I am 55 and have been going to the gym for a year and have lost 3 and a half stone but want to lose another 2. I seem to have stalled.
Gym questions: 1. should I be sticking to doing 1000 calories a week plus weights.
2. Should i do 'interval training' and what is it?

Your calorie intake seems quite low...but then I am pretty active and am only trying to lose about a stone now...Also interval training is HIIT, it means you do intervals of fast and slow cardio (on bike, treadmill or rower, etc), so a minute as fast as you can and then a minute at a slower pace, then a minute of as afast as you can then a minute slower...for between 10 and 15 minutes or so...this gets your heart rate right up and helps burn fat as well as improve speed and endurance if you use it to train for running, rowing or biking races...
