Well i am feeling rather pleased with myself i have made a vegetable soup and its only 45 cals for a big bowl and it will feed at least 8 people so will give it a go tonight and thats my dinner sorted for tom. Might even have a slice of nimble bread with it. If its good may freeze some for another day. lets see how it tastes!!!!!
 
Ohh I love soup. I make a big pot....and the kids and OH eat it and I have to make another one! lol

Here the receipe for the soup

4lb of mixed root vegetable (leeks, parsnips etc)
4oz Butter/Marg
2 Cloves Garlic sliced
1 bay leaf
salt and pepper to taste
good chicken stock or vegetable stock

wash and prepare vegetables, slice ready for cooking
heat the butter/marg in a large pan, add the vegetables, garlic, bay leaf and salt and pepper
stir well coating the vegetables and cook for about 5 -10 minutes.
Add the stock till just covering the vegetables bring to the boil and then simmer gently until vegetables are tender
Remove the bay leaf
Coarsely mash or blend the soup until the consistancy you require.
Taste and lightly season to required taste.
THEN ENJOY.

I am adding chicken pieces today and re simmering.

If you want a sweet tasting soup add extra swede.

Hope you enjoy this one. Hubby had a taste and liked it. Not made this one before, normally make tomato soup as both hubby and daughter like tomato the best.
