I remember seeing Heston Blumenthal talking about this and adding it to his proposed new British Airways meals to give them flavour that would hold even at high altitude.
Never tried it but it looks like it may be something we could have and sounds good. Why not ask Rob?

Just googled 'where can I buy umami dust in uk' and it seems to be stocked by Sainsbury and Waitrose and others.....

It's at tesco, that's where i picked mine up for 2.99 x
