1 onion, chopped
75g carrot, chopped
1/2 stick celery, chopped
50g courgette, chopped
1 clove garlic, crushed
1 tbsp tomato puree
400g passata
100 ml vegetable stock
I know theres oil in this but I could use frylite instead just to cook all the stuff and then puree it. Think the tomato puree may have syns?
I usu make a variation on this depending what veg I have in the house and then freeze it in large ice cube trays and pop them out once frozen. Then defrost in pot over a low heat whiclst cooking pasta. Also works well as a meatball sauce poured over meatballs when baking them
