KFC Chicken done the SW way

Aww thanks so much...guess what im having for tea!
 
Syn Free KFC
10 x Chicken Drummers or 4 Chicken Breasts
1 x Tub Chicken Bovril Paste
1 x Egg
1 x Clove of Garlic crushed (optional if you dont like garlic)
2 x Teaspoons of Ground Black Pepper (optional)
2 x Teaspoons of Mixed Spice (optional)
1 x Teaspoon of mild chilli powder (optional)
4 x Slices brown bread
2 x Teaspoons mixed herbes

Method
Place
chicken drummers/chicken breasts in a deep pan fill with water. Bring to the boil and simmer for 30 mins. Drain and leave to cool. When cool remove the skin and pat dry. Cut chicken breasts into strips.
Place the bread and mixed herbes into a food processor and blend until crumbled and empty onto a large dish. Scoop out all the bovril paste into a small bowl. Mix in the egg, crushed garlic, pepper, spice and chilli until you have a gloopy paste.
Now for the fun bit, but before you start switch on the oven to its highest setting and have a baking tray sprayed with fry light on stand by. Using a spoon carefully dribble the paste all over a chicken drummer/strip then roll it in the breadcrumb mixture and place on the baking tray. Repeat until all the drummers/strips are covered.
Place the chicken in the oven and cook for 10 to 15 minutes or until the breadcrumbs have started to go brown and crisp. Remove and leave to cool. Once cool transfer to a serving plate.
 
I would use just enough to make enough of the paste needed to cover the amount of chicken your using
 
my hubby wanted to know why we needed the bovril chicken. and do i need to use the whole jar?

It creates the paste and yes I use the whole small jar when I do the recipe x
 
They have it in my local Sainsburys on the shelves over the freezers. Haven't found it in Tesco or Asda though. :confused:
 
I wonder if you could make these in batches and freeze them?

If so, would anyone recommend cooking the chicken first then freezing or just coating fresh chicken and then freezing?

I am doing a weekend of batch cooking while I have the extra day off, so I think I will add it to the list :)

Edit: Also could you use Scan Bran for a low syn breadcrumb alternative?

I tried this and sad to say it didn't really work :(

Of course this may have been due to the fact that I couldn't find any chicken bovril, so I thought it would be a good idea to use a dissolved chicken stock cube instead. :eek:

Bad idea.

The chicken tasted ok, just nothing special, so I would say the chicken bovril is essential to this recipe.

Will try again.

Yep, the Bovril is the magic ingredient - who knows it may even be the Colonel's!! ;)
 
Finally made this! It was really nice, although a bit hot & spicy for me. I think next time I'll leave the chili powder out.

I made this tonight. Didn't pre-cook the chicken, used Paxo breadcrumbs, 1/2 tsp of Chilli and only 1 tsp of pepper.

Result - It was lush (in my best Stacey accent!)

I really really tried to leave some for lunch tomorrow, but it was impossible and I munched it.

I had a lot of paste left, so I think I will try it with only 1/2 a tub of bovrill next time.
 
i made this but left of mixed spice, it was amazing :D even my 18month old daughter ate it! also told my SW group about it yesterday and now im under orders to make some for next week lol
