Just turned my ramdom soup creation into a gorgeous korma curry! Made the soup the other day but didn't just want soup for lunch. (starving today) This is what went in the soup;

Small Butternut squash, 1 sweet potato, 4 carrots, pack of baby sweetcorn, tin of butter beans, 1 onion, 2 cloves of garlic, fingernail sized piece of ginger, and curry powder.

Today i cooked some chicken, added the soup, some extra curry powder, garam masala and cumin, and 30ml of blue dragon light coconut milk (2 syns)

It was absolutely yummy, very similar in colour and texture to jarred korma sauce, only thing it was lacking was a few almonds :)

Very pleased i can get two different meals out of a veg packed soup! No 1/3rd super free worries, though i did serve it with diced cucumber and half a chopped banana! ( sounds strange but the sweetness reminds me of mango chutney!) xx
