Lasagne - red day

Right, this might not help, but when I was following Atkins way of eating I used to make lasagne using pre-sliced cheese in place of pasta. Just layer it on the same way as you would the pasta sheets. I'm sure you can get some low fat versions of pre-sliced cheese (Leerdammer etc).

Alternatively, use sliced veg e.g. aubergine thinly sliced, or tomatoes etc?
 
What about leek? (Sliced down the middle and part cooked in strips just enough so you can lay it on flat. I find that leeks hold their consistency quite well (even in the slow cooker).
