left over roast chicken for stock

I thought i was being really clever by using my left over roast chicken to make broth, I threw it in a pan with onions and carrots in a bit of a hurry and its cooking away nicely but has lots of fat on the surface!!! Didnt really think this through...anyone know synage for this now? Obviously its not going to be free?

yeah i know what you mean - i was making cock-a-leekie soup at the weekend and it said to use chicken breast or thighs so i used boned chicken thighs and drumsticks (cheaper) took the skins off and boiled the chicken with the leeks and it defo felt like there was fat in the broth - i ate in anyway coz can't afford to let food go to waste but i'll know better in future i think not to use the bones - i'll keep an eye out on this thread to see if anyone comments on it x
