Leftovers! In need of inspiration

i have some chicken in some stock with bacon in the oven with lots of herbs and spices and some veg all boiling up nicely
make a creamy sauce by softening finely chopped onion and garlic in fry light and add a splash of veg stock if it looks like it might stick, add mushrooms (if you like), the chopped chicken and bacon and heat them through properly, add a squirt of lemon juice, then remove from the heat and adda couple of generous tbs of o% total and stir through cooked pasta.


Strutting her stuff
Add in some mushrooms and you've got the makings of a great risotto. Or as you say a pasta bake would be a good option.
make a sauce with tin toms(whizzed to smooth),garlic,chilli to taste, pinch mixed herbs,salt (sweeteners if the toms are sharp)1/2 pint beef/chicken stock made with bovril. Bung in the leftover meat(any you have). Bring to boil. turn heat down to simmer for about 30 mins until sauce thickens. I also add sweetcorn/onions/other leftover veg. Serve with rice/pasta/jacket potato.
