Lemon Thyme Chicken Casserole

    Lemon Thyme Chicken Casserole

    Chicken thighs (8)or breasts (4)
    1 Lemon
    Sprigs of fresh thyme or 1-2tsps dried
    Med size Sweet potato cubed
    Med size Butternut Squash cubed
    2 x Red onions quartered
    Chicken stock cube
    1level tbsp cornflour
    Place all ingredients in dish (I did it without the lid and it browned the chicken great)
    Place cubes of veg and the sliced lemon all around the chicken. Then add thyme and season
    Crumble stock cube and add cornflour. Mix to smooth paste with little cold water. Make up to 1pt and pour over casserole

    Cook for 1.5 hours on 170C
