Extra Easy Salsa Chicken Casserole

190 g rice
170 g corn
1 can of black beans
450 g salsa (red onion, cucumber, tomatoes, coriander, mint, lemon juice)
325 ml chicken stock
1tsp chilli powder
1tsp oregano
2 chicken breasts
1 onion
cheese (add 6 syns if not using as healthy a)

Pre-heat oven to 180 C, Wash and rinse beans. Mix everything together and transfer to a baking dish. Cut chicken into pieces and add to mixture. Bake for 1 hour.
Sprinkle with cheese and onions. Put back to oven untill cheese melt.


Salsa sauce: put chopped red onions, cucumber, tomatoes, coriander, mint,
lemon juice in a small bowl, mix and set aside.
