Crock Pot Pork #1

Ingredients

2 1/2 pound(s) Pork, Spare Ribs, Raw, (weighed with bone)
1 pound Carrots, peeled, topped and tailed
1 pound Butternut Squash, peeled, chunky sliced
3 medium Apples, peeled, cored, sliced into 6-8 pieces
220ml Apple Juice
2tsp Molasses,
1 1/2 tablespoons Sugar, Light Brown
1 medium Red Onions, sliced

Instructions



Directions:
1. Rub pork with salt and pepper, then brown under grill to remove excess fat.
3. Get apples, carrots, squash, onion, place in bottom of crock pot. Place browned pork on top.
4. Combine brown sugar and apple juice. Pour over top of roast.
5. Cover and cook till tender (approx 4 hours in mine on High)
 
Beef, Cranberry and Walnut Stew

Ingredients



400 g Beef, Braising Steak, Lean, Raw, Diced and Seasoned
1 clove Garlic, Chopped
1 medium Pepper, Red, sliced
1 medium Red Onions, sliced
30 g Walnut Halves, broken into smaller pieces
1 400g can chopped Tomatoes

2 teaspoons Cranberry Sauce
60g Mushrooms, sliced

Instructions


1.
In a large pan, cook meat until browned on all sides. Remove with slotted spoon to a warmed dish. Pour away any excess fat

Place garlic, pepper and onion in remaining oil, and lightly fry until onion is translucent. Return meat to pan; lightly mix together. Stir in walnuts, and cook and stir for one minute. Stir in chopped tomato and cranberry sauce, and season to taste with salt and pepper. Cover, and bring to a boil. Reduce heat, and simmer for 1 1/2 hours. Stir in mushrooms; cook for 20 minutes.

Serve over noodles, rice, or in yorkshire puddings with roasted veg.
 
Lamb and rice Parcels

Ingredients

130 g Lamb, Leg, Roasted

60g Rice, White, Long Grain, Dried

12 individual Chinese Pancake

Fresh Mint

Instructions
1. Cook rice in Water, or if you have any bones left from the lamb, throw those in as well.

2. Cut cooked lamb into small pieces, mix with cooked rice and chopped mint.

3. Divide between pancakes, fold over top of pancake to make pasty shape and seal with water. Brush over with water and bake in oven at 180C till brown (about 10mins). Eat hot or cold.

Additional info

This is essentially a left overs recipe. To cut PP down further, use free roasted veggies with which ever meat you have left over. There are loads of possibilities.
 
Flavoured French toast

Ingredients

4 Slices Hovis Best of Both Medium Bread
2 medium Eggs,
1/2 tsp Strawberry Jam
1/2 tsp Honey
1/2 tsp Chocolate Nut Spread
1/4 teaspoons Cinnamon

Instructions


1. Beat eggs with Cinnamon, then set aside.
2. Place the bread on top of each other and cut into thirds.
3. Make each third into a sandwich with each flavoured spread.
4. Slice each sandwich into 2 pieces (you should end up with 4 of each type).
5. Dip each sandwich into the egg mix and cook on a hot plate / Dry frying pan. Flip over to brown sides evenly.
Note. If you have a breville / panini press / George forman, they work quite well, just don't press too hard or they end up flat.
