Hi everyone!

I'm going to give this diary malarkey a go. I don't go to my slimming world group any more as it clashes with my job and I can't really afford to join online. I've been doing this for nearly a year though so I'm crossing my fingers that I can keep it up. As part of this, I'm holding myself accountable to you guys!

I will post what I eat each day and how many syns I have had as well as any recipes I use that I think might be interesting. I will be 100% honest so if you're looking for a diary to take inspiration from then beware! Don't worry, I'll admit very clearly when I've not stuck to plan!

The other change I am making is that I'm only going to weigh in once a month. I went through a period of weighing every day and found this quite destructive. I weighed this morning and I weigh (gulp) 15st 7.5lb. I've managed to put a stone on since my willpower wobbled a few weeks ago. But, onward and upwards (or downwards hopefully!). I started at 19st 9lb so I know I can do it, I just have to get my head back into gear!

Okay here goes, day 1...

I only remembered to take a photo of lunch, I'll try to be better tomorrow! I forgot to say, if anyone wants a recipe for something on here, please ask, i'm always willing to share!

Breakfast:
Smoked mackerel pâté, 2 ryvita (1/2 HexB), celery, carrot and cucumber. (2 syns)

Lunch:
Leftover roast chicken, onion, jarred roasted pepper and cheese (HExA) omelette with a side salad.

Dinner:
Beef tagine with a pack of Ainsley Harriott cous cous (spice sensation) and a dollop of fromage frais. (1 syn)
Small pot of total 0% with raspberries.

Snacks:
2 apples
2 400g loaf slices toast with 2 tsp Lurpak lightest and bovril (1/2 HexB, 5 syns)

Water: 8 glasses
Syns: 8

A good day I think and didn't feel too hungry.

Well I have to say, with 8 glasses of water yesterday, I was like a racehorse (if you catch my drift!). I felt like I did when I was pregnant and having to visit the little room every ten minutes! Does anyone else drink this much without having to do this all the time!? I'm hoping I'll adapt to it eventually.

Smoked Mackerel Pâté

Serves 2 (generously)
EE: 2 syns per serving*
Red: 2 syns per serving*
Green: 15.5 syns per serving*
*This depends on what mackerel you use (I used Tesco Everyday value). Please see note at the bottom of this post to see some syn values.

Ingredients:
200 g smoked mackerel
250 g tub of quark
Lemon juice to taste
[To serve]
Chives to garnish (optional)
1 cucumber
4 carrots
4 celery sticks
8 ryvita (HExB)

Whizz up the mackerel and quark until desired consistancy. Season with lemon juice to taste. Scatter with chopped chives.
Serve chilled with crudites.
Enjoy!

I have found smoked mackerel really difficult to find syn values for so here are a few I have put together. Careful, it varies wildly!! The syns are EE, Red, Green

Tesco, Everyday Value Smoked Mackerel Fillets, 100g 2 2 15.5
Tesco, Smoked Mackerel Boneless Strips/Fillets, chilled, 100g 1½ 1½ 15½
Tesco, Smoked Mackerel with Crushed Peppercorns, chilled, 100g 1 1 15
Co-op, Smoked Mackerel Fillets, Plain/Peppered, chilled, 100g 1 1 15½
Asda, Smoked Mackerel Fillets, chilled, 246g pack 1 1 36

Chicken and Roasted Pepper Omelette

Serves 1 as a meal or two as part of a meal
EE: Free if using the cheese as a HExA
Red: Free if using the cheese as a HExA
Green: Free if using the cheese as a HExA and chicken as a HExB

Ingredients:
3 eggs, lightly beaten
Salt and pepper
1/2 onion, sliced thinly
1 jarred red pepper (in brine or vinegar only), chopped
70g shredded, roast chicken
40g reduced fat cheddar, grated
Frylight
[To serve]
Salad

Fry the onion in frylight until soft and then add the chicken.
When warmed through, add the peppers and fry for a minute.
Season the beaten egg and pour into the pan, stirring until combined. Level with a spoon and leave on a medium heat until beginning to set.
Sprinkle the cheese on top and put under the grill until the cheese is bubbling and golden.
Serve with a side salad.
Enjoy!

Hi liz just wondering do u know why mackerel so high on green or is it all fish high
on green??
 
All fish is synned on green, like meat, but for some reason smoked mackerel is particularly high. I think they must use oils in the smoking process or something. Shame because it's gorgeous!

Beetroot and Feta Salad

This is a healthier adaptation of a Jamie Oliver recipe.

Serves 2
EE: 1 syn per serving (or you could use the feta as part of your HExA)
Red: 1 syn per serving (or you could use the feta as part of your HExA)
Green: 1 syn per serving (or you could use the feta as part of your HExA)

Ingredients:
1 x 250g pack of vac-packed beetroot
Balsamic vinegar
1/2 lemon
A bunch of fresh flat-leaf parsley
50g feta cheese

Grate the beetroot in the food processor. Remove the bowl from the processor, take out the grater attachment and pour in a couple of lugs of balsamic vinegar.
Squeeze in the juice of ½ a lemon. Finely chop a bunch of parsley and add most of it. Stir to dress, then tip into a nice serving bowl. Scatter over the rest of the parsley. Crumble over the feta.
Enjoy!

Day 3

Breakfast:
Mushrooms on toast and an apple (2 syns for 2 tsp lurpak lightest)

Lunch:
Tuna pasta salad (2 syns for EL mayo)

Dinner:
Beef tagine with a pack of Ainsley Harriott cous cous (Moroccan medley) and a dollop of fromage frais. (1.5 syns) and the rest of the beetroot and feta salad (1 syn)
Small pot of total 0% with strawberries.

Snacks:
2 apples
A glass of milk (HExA)

Water: 8 glasses
Syns: 6.5

Had a sneaky weigh this morning too and I've managed to lose 6.2lb since Monday! Yay!
