Green Day Loaded Jacket Spuds

I've made Loaded Jacket Spuds for tea tonight.

2 Jacket Spuds
2 Sweet Potatoes - Chopped and Boiled
Spinach - Chopped and Boiled
Ricotta

Mash the Sweet Pototoes, Spinach and Ricotta together.

Cooked the Jackets as normal in the oven but when nearly cooked, scrap out the middle and mash in with the others.

Scoop back into the potato and cook for a little long.

Grate some cheese on the top if you want.

Oo that sounds quite nice. I had jackets with philly and bbq beans last night which was lovely, will have to try this next time.
