Low Carb...reading suggestions

Dietninja

Mostly plant based
I'm eating low carb high fat, but am not strictly following Atkins. There are all sorts of great books on this topic out, so I wondered if anyone else wanted to share their favourites.

I'm reading High Fat Diet by Zana Morris at the moment (it was featured in the Times at the beginning of Jan) and whilst I don't intend on following the diet, there are loads of low carb / Atkins friendly and very speedy meal ideas - some great ideas for packed lunches too. Nom nom nom!

Here's some I'm going to try:
- Creamy ratatouille with grilled salmon
- Two slices aubergine, grilled topped with fresh or canned tuna in oil and one boiled egg mixed with one tablespoon mayonnaise
- Peppered lamb steaks with creamy mushroom sauce and courgetti
- Parma ham spread with full- fat cream cheese. Wrap round lightly steamed asparagus spears and serve with rocket
- Feta and avocado dip served with king prawns
- Omelette made from 2 eggs, diced cooked chicken or sliced grilled bacon and Boursin cheese. Serve with courgettes

There's loads more...these are just from the maintenance section :)

Oooh some lovely ideas there ninja - thanks! :D
