hey guys and girls..

today i was in a bit of a pickle as to what to do for lunch as cuboards are low!

so i made mash, and used natural yogurt instead of butter and semi skimmed milk .. which made it uber creamy, then i mixed fresh chopped parsley from my plant, bacon and red onion into it, and did a seperate batch with tuna for mother whos a veggie.. and had melted cheese on top as HEA ..

i just wanted to share cause it was bloody gawjus!!!!

In one of my indian cookbooks (written by the guy who write many SW recipes inc the Curry book) he gives a recipe for indian mash, your recipe reminded me of it - it is lush, and IIRC:

boiled potato (enough for 2), low fat yogurt or fat free fromage frais, fresh red chilli, red onion (or spring onion), juice of 1/2 lemon, salt, fresh coriander and mint.

It makes a great side dish to a curry (makes a change from rice) and also makes fantastic potato cakes (which are yummy with baked beans)
