Meal Planning on EE

I've been doing the diet on green days for nearly 5 months and i've lost a stone. Which i'm really pleased with. Its only come off slowly for me which was expected.

We really need to get my dad loosing a few stone and he won't go to the classes etc.

Thinking the EE plan will be a good one for him and he's asked me to do a weeks meal plan for him.

So i'm in need of some lunch ideas (must be cold, as he drives a coach for work) and dinner ideas. Pretty Please?

Pasta with peppers, spring onions, sweetcorn and chicken
Coleslaw with Grilled Chicken
Stuffed Peppers
Tuna/Pasta bake with veggies
Tandoori chicken pieces with rice and Raita (yogurt with tomatoes, onions, cucumbers)
Spinach Cannelloni with Salad

You may want to look in some of the food diaries for some inspiration as well.
