Medittereanish style couscous

This is a recipe i just invented by accident. Just tried it and ended up eating tomorrows lunch so had to make another batch. And its free so you can make a massive portion if you like

I did it in cups cos i couldn't work out the oz's but think its 8oz for a cup.

Makes 1 portion(to serve with salad)
1/2 cup couscous
3/4 cup boiling water
peppers
cucumber
spring onion
tomato (i didn't put this in mine but would work well)
good spinkle of paprika
1/2 tbsp coriander
1/2 tbsp lemon juice
1/2 tbsp lime juice
1 tbsp fat free natural yogurt

1. Put couscous in a bowl and pour over boiling water, cover and leave to stand for a few minutes until water is absorbed stir well.
2.Once water is absorbed add in chopped peppers (I added red and yellow), spring onion, cucumber and tomato (if you want) as much as you want, they are all free.
3. Sprinkle in paprika (and you might want to add pepper and salt to your liking
3. Mix lemon and lime juice with the natural yogurt and coriander and stir into the cous cous

Thats it, very zingy with a bit of spice i found. You could alter it and add other veg or take out the paprika so its not the the bit of spice.

And I think it is free on green and extra easy
