Minestrone Soup (No Pasta)

I worked this out at only 1pp per bowl & makes a pleasant change from the BNS soup.

2 oxo chicken stock cubes
Tin chopped Toms
2 carrots
2 onions
1 potato, diced
4 Bacon Medalions
2 cloves garlic

Make 1.2 Lt Stock with cubes in slow cooker.
Chop all veg & add to stock in SC along with tin of tomato and crushed garlic.

Cook on Medium for 3 hours.

I dont add pasta as I am trying to keep to low carb, but if you wish add pasta after 2.5 hours. Dont forget to point the past.

Season with pepper
