Green Day Moroccan beetroot, chickpea & tomato soup.

Keldelacoe

Vintage Virgin Vegan
400 veg stock
4 ish cooked fresh beets (can use pre done )
Tbsp ground cumin
1 tin of chickpeas
1 onion
2 garlic cloves
S&p
1 tin of tomatoes
Left over ripe fresh tomatoes (if you have any in)
Fresh parsley
1 juice of a lemon
Red spilt lentils

Brown the onions, garlic and add fresh tomatoes. When sautéed add the cumin and stir through. Add stock and tinned tomatoes and beetroot and red lentils. Reduce heat and simmer until the lentils are cooked (hour ish) add chick peas and lemon and serve with lots of fresh parsley ... S&p to taste and add cumin accordingly to your taste :)
