Munching vegetables while making a dish

I tend to look at the 1/3 vegetables as not so much part of my meal all the time, but as stuff i just munch away on before i serve up food. Carrots, radishes and red peppers are the best.

Love doing a chicken omelette for example, besides onions, I dont like cramming it with veges, but munching on raw vegetables as I make it just becomes a habit, and you find after a while you dont notice your doing it. Thoughts?
