Mushroom & Bacon Penne

Serves 4
Ingredients:
2 oz/57g baby leaf spinach, roughly chopped
11 oz/312g dried penne
fry light
11 oz/312g bacon rashes, all visible fat removed, roughly chopped
1 onion, finely chopped
7 oz/198g button mushrooms, halved
5 oz/142g cherry tomatoes, halved
3 garlic cloves, finely chopped
4 tbsp fat free fromage frais
salt & pepper
Method:
Place the spinach in a large colander & pour over boiling water so it wilts. Press to remove any excess liquid & set aside. Cook the pasta, drain & keep warm. Spray a large frying pan with fry light & cook the onions & bacon for 2-3 minutes. Add the mushrooms, tomatoes & garlic & fry until the mushrooms have softened. Stir in the drained spinach & pasta. Cook for another 1-2 minutes or until the mixture is piping hot. Remove from the heat & stir in the fromage frais. Season to taste & serve.
