Mushroom Soup??

Should be pretty easy to substitute any recipe. First google hit brought this one - Id just omit the butter and fry in Fry Light, maybe add a little salt and it'd be free.

Or you could use a tsp extra virgin olive oil if you want to keep a bit of oil in - only 2 syns for the lot.

Here is one recipe...........

Pete’s Mushroom Soup-2

Serves 2
450mL Hot vegetable stock
100g white mushrooms, chopped finely
1 onion, chopped finely
1 celery stick, chopped finely
1 garlic clove, chopped finely
1 tsp mixed herbs
Spray a saucepan with Fry light and add the onion and garlic and “sweat” for 5 mins.

Add mushrooms and cook for a few minutes then add the hot stock, herbs, and bring to the boil then reduce the heat and simmer for 15 mins.

Remove from the heat and part liquidize, leaving small pieces of mushroom, with a hand blender, add seasoning to taste, simmer for a further 15 mins.

love mushroom soup!! and will make a change from the boring veg one i normally make lol.
