Red Day Need some inspiration for tonight s dinner, I have the following......

    Aubgergines
    Extra lean Minced Beef
    Onions
    Garlic
    Tomatoes
    Red Peppers
    Herbs & Spices

    I am thinking of maybe some kind of stuffed Aubergine - but never made them before. I have some lowlow cheese slices (can have 2 for HEa) - so that could be a topping, or maybe a lasagne again using the Aubergine in place of pasta sheets???

    What would you guys make??

    Try this chilli and leave out the kidney beans and add the aubergine.

    We had it last night and it was lovely. We did use hot chilli powder and a bit of paprika to. It makes all the difference being cooked in the oven.

    Have it with sw chips made from your jacket pot ration :D

    I think i'd go for a kind of Mousakka with those ingredients

    ohhhhhh didn't think of chilli :rolleyes:

    I have a lasagne type thing cooking away nicely in the oven as I type :D I just replace the lasagne sheets with sliced aubergines instead - very yummy, well hubby & kids all enjoy it too so thats always easier IMO :D
