New diary, new me :)

Glad your back shrinki! Has been lonely without you haha! I haven't stayed true to my diary promise like I had hoped, though I have stayed on track, hoping to get back in the swing of things today! You will have to let me know how the Thai curries go, shrinki, the bf absolutely loves them and he doesn't normally like cheese at all, but, I didn't tell him it had phili in haha, naughty me!

Need some yummy ideas for meals and I'm gonna flick through the forum now for inspiration! Going shopping tonight and I'm excited to cook something different!

Have also been craving something sweet lately and the alpen bars with fruit and yog are no longer hitting the spot! I need some sort of cake, not fond of quark and many of the sweets on here, a lot are very eggy or over sweet with the corpeus amounts of sweetener added, so im goin to try and make a low syn alternative at some point, after raking through my recipe books later!

Anyway, if anyone has any ideas please let me know, I'd be very grateful! X x
 
Ok so back to the diary...

Today has been an odd day food wise! Have ate nothing all day because my car wa in getting fixed and my cupboards were bare, however, prior to getting the car back an doing a food shop it gave me time to figure out what to buy. Some meals I plan on making this week are;

-Spicy meatballs with tomato an chilli sauce served over spaghetti.

-homemade beef burgers with cheese, bacon and BBQ sauce with sw chips and salad.

- superspeedy butternut squash soup

-stirfry beef and noodles (with my own special sauce ;) )

-Thai red curry (as requested by the boyf)

-sticky chicken and rice

-beef borginoin

Plan on having a big cook off to freeze lots of the meals for easy cooking since I have been so busy lately. Started off making the meatballs and superspeed soup.

So... Todays food only included spicy meatball spaghetti and salad(2) and that's it! Oh I did use my heXa on Parmesan cheese on top too!

2 syns for balsamic vinegar, may have a hot choc before bed! Rock and roll or what haha!! Here's a pic anyhow...

Okaaayyyy! So today was a better day!

21st feb 2012:

Breakfast: half a melon

Lunch: superspeed veg soup

Dinner: Asian fusion sirloin steak stirfry...with a made up yummy sauce less than 1 syn/portion!(pic below)

Snacks: HeXb 2 alpen lights

Hi hun! Hope your well! Hmmmm that's a toughie! I love both so much, though, I've not had the red in a while...

I wish I could airmail you some hun! I miss reading your diary sooooo bad! I need some ideas for new meals but the whole mushy pea curry, over kill with beans(not meaning Heinz beans ha!) and things people make on here put me off!

Quite a fussy eater at times, dislike quark and most of the sweets on here that I tried too but I'm goin to try a sw version of my French toast after w.I tomorrow so hopefully that will curb the sweet craving. Hoping to try think of more meals soon! X x
 
Wed 22.02.12-daddys birthday (even resisted Chinese everyone else ate :eek: -wink wink- -nod- (how good am I?)

Have been really busy today with work/running through town for dads bday prezzie/housework/washing/ironing Which meant i havent snacked at all. Havent particularly felt very hungry either, so here goes...

Breakfast: 1 alpen light choc fudge(half HeXb) coffee

Lunch: leftover stirfry (1)

Dinner: whipped up a quick spag Bol with my heXa Parmesan for convienience and quickness. Can of diet pepsi.

Ok today's diary was odd but yummy all the same..

B- ended up being a brunch of a chicken tikka salad with homemade pesto(1) and a stuffed mushroom heXa cheese.

L: ended up being breakfast haha 1 slice of French toast with 1syn worth of icing sugar and strawbs n kiwi (pics below)

D: was stir fry rice with veggies

Ok so the other half has requested Thai red curry for dinner today, was trying to have a red day but it can easily be adapted I guess unless I syn the rice...hmmm decisions decisions! X

Lunch: bolegnese pitta pouch HeXb

Ok so today I had one of those "can't be fooked on days"! Everything that could go wrong, did and ended up being a Long, busy stressful day at a job I hate so bloody much so when i got home I just slobbed with the boyf! Not a very interesting day food wise since I worked 10am-8pm so only had a chance to grab something simple before work and cook something easy after! Clamming for a glass of vino but i want to reach 4 stone off by the end of march so i must resist! Oh to be skinny! Anyways here's the diary:

26th feb 2012:

Breakfast: 2x wholemeal toast HeXb with beans and a poached egg with blak pepper and a coffee, pic below, followed by strawbs and kiwi and a fat free strawb yog

Lunch- only got 15 mins so ended up being a bottle of water- yum! -rolls eyes-

Dinner- a simple beef stirfry, quick and easy followed by some Diet coke and a mint choc muller light

Syns -0 really couldn't be bothered tonight! What's wrong with me haha!

Yesterday's diary- was out all day so it's a bit brief!

B-slept in for a change with the oh! :p

L- Sunday roast- giving 5 syns for gravy and the half a yorki pud I had

S- hi-fi bar (3)

D- red and white cabbage in a pitta (HeXb) with home made garlic sauce(0.5)

Total syns-8.5

You and me both hun! I have some fab shoe porn! We should share hahah! Men just do not get the shoe obsession, it's such a shame. He likes golf, I like shoes, it really is that simple haha. Hope your well minky x x
 
Ok so went all out for dinner ladt night as had ate nthing all day! mon 27th jan:

B- water

L-water- was out all day

D- mustard stuffed chicken wrapped in bacon with homemade potato rosti, green beans and broccoli served with leek and white wine sauce(pic below, will also post recipe, was 10.5 syns for the whole lot so divide that by the portions for syn allowance) was seriously yummy and well worth the syns -just over 2.5 for me so will say 3!

Dessert- made a chocolate cheesecake with strawbs (pic below) 4 syns

Total syns- 7

Recipe for mustard stuffed chicken- as requested!

Ok so the chicken recipe is approximate as I
made it up as I went, may need tweaking to your taste!Mine was based on serving 4 but could probably get a little more out of it!

Ingredients for the stuffed chicken:
200g phili extra light
1tbsp wholgrain mustard-used half for stuffing half for sauce(below)
Bacon all fat removed(enough to wrap your breasts :eek:)
Garlic
Seasoning

Method:
Mix the mustard, seasoning and 2/3 phili in a bowl, cut a slit in the chicken to create a pocket and spread the phili/mustard mix in the pocket, share evenly between the chicken breasts. Wrap in bacon and place on a baking tray covering with foil, I cooked mine on a medium temp for around 30 mins but this will depend upon your oven!


Ingredients for the sauce:
125ml ww white wine (or of your choice)
1 leek
Garlic
1 onion
Seasoning
Little of the tbsp of wholgrain mustard from the chicken
Rest of phili
Couple of rashers of bacon chopped
2tbsp Double cream (I normally use ww double cream but my supermarket had run out do used Elmlea at 2.5 per tbsp- will be less syns with the ww one I think?)

Method:
Basically lashed in the bacon then the veg left it to cook chucked in the wine till the alcohol burnt off then added veg stock cube let it simmer add a touch boiling water if becomes a bit dry, throw in the cream and phili- bish bash bosh- done

Ideal served with potato rosti(will post recipe below) green beans and broccoli or any veg you like! Can also use the sauce for pasta which is yummy, just chicken and bacon thrown in onsome tagetelle with hexa Parmesan on top!

Potato rosti recipe:

Ingredients:
Grated potato- how many pots depends on how many people, I used 4 medium pots and got two per person based on for servings!

Seasoning/onion/garlic/herbs if you like-experiment!

Method:
Grate pots add seasoning and extras, mix and put into a sieve, squeeze out as much liquid as possible and form into rounded flat cake shapes, fry until golden brown on both sides and well formed then stick in the oven until cooked through! Word of advice- use a non-stick pan!

Breakfast: 3 strawberry and cinnamon pancakes (half hexb) with strawberries, kiwi and a dollop of strawb yog (pic below) coffee

Lunch: sw chilli, rice and salad, a banana

Dinner: ww chicken curry(4) salad, 3 pancakes fruit for afters ( other half HeXb)

Exercise: went for a long walk down the beach today as it was 18degrees(in feb, I know :eek:) was about 3mile right along seafront and back, then went hiking up a huuuge steep hill which took about 90mins there and back, then spent afternoon running round the garden with nephews so I'm well and truly buggered now haha! Fun day though!
