1 onion, finely chopped
1 red pepper, finely chopped
1 green pepper, finely chopped
2 garlic cloves, crushed
284ml / ½ pint stock made with Bovril
4 large tomatoes, skinned and chopped
salt & freshly ground black pepper
juice of 1 lime
1 tsp wine vinegar or balsamic vinegar
dash of West Indian hot pepper sauce

1. Put the onion, peppers, garlic and stock in a saucepan. Cover the pan and bring to the boil. Continue boiling for about 5 minutes, then uncover the pan, reduce the heat and simmer for 20-25 minutes, until the onion and peppers are tender.
2. Add the tomatoes and cook for about 5 minutes, until the sauce has thickened and reduced. season to taste with salt and pepper and add the lim
