Parsnip and ginger soup is LUSH!
2 carrots
2 celery sticks
1 onion
1-2 cloves garlic
thumb sized piece of ginger
700g parsnip
2x chicken stock cubes
1/2-1 litre boiling water.
Chuck everything in a pan and boil for 30mins, blend and serve.
I added some squash to mine tonight. Lovely warming winter soup
