Ingredients:
3 large eggs or 4 medium eggs
150g Quark or 150g low fat Cottage
Bacon
Onions
Mushrooms
Tomatoes
Cheese
75g cheddar cheese for topping
Method:
Pre-heat oven to Gas mark 5
Pre-fry bacon, onions & mushrooms (helps to get rid of excess water in the mushrooms)
Whisk together the eggs and the Quark or Cottage Cheese
Spray a quiche dish with fry-light and lay out your fillings
Pour over egg mixture
Top with cheese
Bake in oven for 30-40 minutes or until firm
Depending on ingredients this can work out anywhere between 120 cals and 165 cals per quarter
There are endless options with this quiche - a potato base is nice
- spinach and tuna is delicious
- salmon and brocolli is yummy!
Also - I sometimes make 10 individual quiches in a muffin tin as my kids like different fillings
