CHEESE ONION & POTATO PASTY
----------------------------------------

Serves one
1 wholemeal pitta (heb)
1 onion chopped
1 chicken or veg stock cube with 60 ml water
1 large potato peeled and chopped
1 healthy extra allowance of grated cheese

Frylight a pan, add onion and cook until softened
Meanwhile boil potatoes in water and stock
When potatoes soft, mash with a fork, add onion and a little more water if needs. Add cheese.
Should resemble a purée
Toast pitta for a minute to allow to slit easily Stuff with mixture
Brush with beaten egg and cook for 10 mins or until brown.

BEEF CHILLI & WEDGES
-----------------------------

454g pack of mince
1onion finely chopped
2 cloves garlic finely chopped
1 small carrot grated
1 celery stick finely chopped
1 red chilli chopped
1 tsp Chinese 5 spice
1/2 tsp cumin
1 tsp chilli powder
1/2 tsp paprika
3 tbsp tomato purée
240g can kidney beans
400g can chopped tomatoes
1 large spring onion
Allowance of cheese grated

Spray a pan with frylight , cook onion, garlic, celery , carrot and red chilli, for 3-4 mins until beginning to soften
Add beef, Chinese spice, cumin, chilli, paprika and cook for a further 3-4 mins

When beef is browned add kidney beans, puree and tomatoes, bring to boil And simmer for 20 mins, add seasoning to taste. Serve topped with grated cheese And chopped spring onion. sw Wedges and chopped salad

How do you get your wedges so perfect? Mine are usually too crispy!
 
PRAWN PURI
-----------
Serves 4, syn free
2 onions finely sliced
Fry light
1 tbsp curry powder
2 large tomatoes chopped
150g cooked prawns
Fresh coriander leaves
Wedges of lemon

Lightly spray a pan with fry light, cook onions until transparent but still firm
Add curry powder and fry gently for a couple of minutes.
Add tomatoes and prawns until warmed through
Sprinkle with fresh chopped coriander and serve with a wedge of lemon


ONION BHAJI

Makes 6 good sized or 12 minis
1 syn if 12. 2syns each if 6

200g / 7oz onions peeled and thinly sliced
50g / 2oz gram flour
1 tsp lemon juice
2tsp ground cumin
1 tbsp coriander seeds crushed
1 tsp deseeded and chopped green chillies
1 tbsp chopped coriander leaves
1/4 tsp baking powder
Salt
Fry light

Place onions, gram flour, lemon juice, cumin, coriander, green chilli, chopped coriander, and baking powder in a mixing bowl . Season with salt and add a few tablespoons of water to form a thick batter that coats the onion.

Preheat oven gas 7, line a baking sheet with paper and form into mounds. Spray with frylight and bake for 15 mins.

CUCUMBER CHILLI AND MINT RAITA

Syn free
1 cucumber peeled and grated
250g low fat natural yogurt
1/4 tsp sweetener
1 red chilli chopped
8 tbsp chopped fresh mint
Juice of 1/2 lime

Place cucumber in a sieve and squeeze out all the liquid. Put cucumber in a bowl. Add yogurt, sweetener, chilli mint and lime juice and stir well. Season, chill and serve

CREAMY COCONUT CHICKEN

Recipe from furrystomper

9 boneless skinless chicken thighs to give 3 thighs each to serve 2 plus a serving for the freezer.
1 chopped garlic clove
1 tbsp curry powder
1 red onion
1 tsp chicken bovril
1/2 tin coconut milk. ( syn according to details on tin)

Place chicken in a slow cooker, put onion and garlic on top
Mix coconut milk, curry powder and bovril together in a bowl then pour over chicken
Cook on low for 6 hours.

PEBBLES CHILLI PIGGY PASTA
------------------------------------
Serves 4
1 red onion- sliced
1/2 red pepper 1/2 green pepper - sliced
Handful spinach
4 Joes garlic and herb sausages (free)
4 rashers bacon
3/4 bag Penne pasta
Lloyd grossmans tomato & chilli pasta sauce (11 syns per jar divided by 4 = 2.75 so call it 3 syns per serving )

Cook the pasta to instructions , drain .
Put sausages under grill/ halogen/ oven to cook
Meanwhile spray a pan with frylight and add the onion , cook until soft
Add peppers and remove from pan once cooked through. Set aside.
Add bacon rashers chopped (and all visible fat removed) cook until browned.
Then stir spinach through until wilted.
Empty jar of sauce into pan , heat through then add pasta and other ingredients.
Chop sausages into bite sized pieces and stir through pasta.
Grate allowance of cheese on top and pop under grill, or into oven until melted. I used morrisons farmhouse mature but reduced fat cheese and used 2 'Hea's of 45 g each and it gave me loads once ,melted.

BEEF GOULASH ( k wise recipe )

Serves 4

INGREDIENTS
Frylight 1lb beef /pork or lamb cubes ( I used beef )
2 onions, chopped or sliced
1 red pepper, deseeded & diced
4 garlic cloves, chopped
33g Chorizo, diced (3 syns)
1 tin quality plum tomatoes, chopped
2 tbsp paprika
300ml water
1 x rich beef stock pot
1 x herb infusions stock pot
Pinch of dried chilli flakes
Salt and pepper
Sour cream / Greek yoghurt
METHOD
Fry beef cubes in frylight in a heavy bottomed pan until browned.
Take out and fry chopped onions, diced peppers, garlic and chorizo until soft.
Add tomatoes, paprika,stock, chilli, herb infusions, water and beef and season.
Bring to boil.
Transfer to a ceramic dish and cook at gas 4 for 3 hours.
Serve and add a dollop of 0% Fat Greek yoghurt if required

TARTIFLETTE
----------------
A popular French dish, easy to make
Serves 4

1 onion chopped
4 medium potatoes peeled & sliced
4 rashers of bacon cut into small strips
75g Plain philly
60g French camembert/brie or cheddar
Salt & pepper

Fry onion,& bacon in frylight, then add potatoes and fry
add 100ml water and allow potato to cook for 6 mins covered.
Mix philly with 3 tbsp water , salt & pepper.
Put potato mixture in a casserole dish, pour philly mixture on top and toss so potatoes are evenly coated.
Cook at gas 5 for 20 minutes until potatoes are cooked.
sprinkle grated cheddar or chunks of camembert/brie on top and cook until cheese is melted.

APPLE & BLACKCURRANT BATTER PUDDING

SERVES 6 , 6 syns a portion.

It was so easy and cooked in 25 mins, really yummy almost like having a sponge.
85g plain flour
2 eggs
285ml milk
1 tsp vanilla extract
30g caster sugar
2tbsp sweetener
350g apples peeled, cored and sliced
50g black currants
1 level tbsp Demerara sugar

Preheat oven gas 5 / 190c Spray a shallow dish with frylight and place fruit over the bottom.
Sieve flour into a bowl.
In a jug mix together vanilla, eggs, milk, caster sugar and sweetener.
Pour half into the flour and bind together then gradually mix remaining in until you have a smooth batter.
Pour batter over fruit and scatter Demerara sugar.
Bake for 25mins or until browned and cooked through. Simply gorge

SPICY PARSNIP SOUP
---------------------------
Serves 2 syn free

340g parsnips diced
1 onion chopped
1 garlic clove crushed
Fry light
1tbsp curry powder
1 tsp each - cumin, coriander, turmeric, ginger
1 pint of water and a chicken stockpot
Salt and pepper


Spray pan and cook onions, until softened, add garlic and powdered spices and cook for 3 mins. Add a little of the water for stock if needed. Add parsnips, water and stockpot , bring to boil then simmer until parsnip cooked.
Blitz and add more hot water if required. Very tasty

POTATO SALAD
-------------------


Ingredients

Approx 1 kilo new potatoes, washed and cut into small pieces
4 Hard Boiled Eggs, roughly chopped
3 Spring Onions, sliced
1 Red Pepper, chopped
5 Radishes, chopped
5-6 Tblsp Extra Light Salad Cream (1 SYN per Tblsp)
1 tsp American Mustard (1 SYN)

Boil potatoes (in salted or unsalted water). Leave to cool

To make hardboiled eggs - pour boiling water into a saucepan. Carefully lower eggs (using a slotted spoon) into water - if done slowly shell should stay intact . Bring back to boil and time for 8 minutes. Remove and cool with cold water and peel. Roughly chop. Leave to cool

Mix all prepared veggies and eggs.

Mix together salad cream and mustard and mix into potato salad.

DEBS MIDDLE EASTERN SPICED LAMB KOFTAS

[/U]SERVES 4 SYN FREE ON RED AND EE

500g minced lamb
1/2 onion very finely chopped
2 garlic cloves crushed
1 tsp ground cumin
1 tsp ground coriander
1 twp ground turmeric
pinch cinnamon
1/4 tsp cayenne pepper
2tbsp chopped coriander
1tbsp chopped fresh mint
1 lemon cut into wedges to serve if required

mix the lamb in a bowl with the onion, garlic and spices and herbs.
season well with salt and pepper
with wet hands shape the mixture into 12 cigar shapes or koftas

these can be left in the fridge for up to 24 hrs until required to cook, or freeze provided mince has not been frozen previously.

spray a large pan with frylight and gently fry for 10-15 mins until cooked.
when cooked either leave to cool slightly and push onto skewers and serve on rice with salad, or with couscous.

alternatively serve in a pitta loaded with salad and add tsatsiki to it, and a side serving of cucumber and tomato like i did.

DEBS HERB CRUSTED COD

Serves 3 syns per serving = 3

I bought a large piece of cod which divided up into 3 good sized pieces.
5 olives ( 7 olives for 1 syn so this is a negligible amount per person)
50g breadcrumbs (9 syns divided by 3

Grated rind of 1/2 lemon
1 tbsp each of chives, dill , parsley and tarragon
Salt and pepper
1 beaten egg

Preheat oven to gas 5 . Wash fillets and place on paper on a tray
Chop the olives finely and mix with breadcrumbs, lemon rind, herbs, salt and pepper
Dip fish in egg and then place back on tray, press breadcrumb mixture on top of each piece of fish, spray with frylight and bake for 10-15 mins.

Debs Broccoli chicken & Gorgonzola bake

Serves 3 . 1.5 healthy extra a's per serving

350g broccoli (1 medium head) cut into florets
3 chicken breasts sliced
Frylight
100g Philly light (1.5 hea for whole dish so divided by 3 servings = 1/2A each)
90g Gorgonzola ( 1 hea each for 3 servings.)
120g mushrooms sliced
1/2 veg stock cube
1 tsp aromat ( aromat is a small herb like tub of seasoning)

Blanch the broccoli in a saucepan of salted boiling water, uncovered for 3 mins, drain.
Preheat oven to gas 4 Spray a pan with frylight and add the sliced chicken and a tsp of aromat.
Brown chicken then place into an ovenproof dish evenly covering the bottom
Respray the pan and add the mushrooms, when cooked add to the chicken .
Now slice the broccoli and place on top of chicken and mushroom.
Lower the heat in the pan and put Philly in, slowly add 100ml water and 1/2 a veg stock cube.
When mixed well, turn off heat , add the Gorgonzola broken into pieces, and stir until melted.
Pour over the chicken , season and bake for 30 mins

Deliciously creamy cheesy scrumminess

DEBS COQ AU VIN ( slow cooker) , SWEET POTATO MASH & CAULIFLOWER CHEESE

COQ AU VIN
--------------
Serves 4 . Syns
4 chicken quarters
1 onion
2 carrots
250 ml red wine (9 syns)
6 mushrooms
1 stick of celery
1 tsp garlic granules
1 tsp mixed herbs
150ml water and a chicken stockpot
2 tbsp cornflour mixed with a little water to a paste to use if required to thicken once cooked. (6syns)

Take the skin off the chicken and brown quickly in a frying pan, Put into slow cooker.
Add carrots chopped into thick slices, sliced onions, sliced mushrooms, chopped celery, garlic granules, herbs, wine and stock. Season and cook on medium for 6-8 hours.
Remove the sauce and pour into a saucepan and Add the cornflour to thicken if required and serve.

SWEET POTATO MASH
----------------------------
Boil sweet potato, drain and mash. Add a squeeze of lime juice and a teaspoon of chopped fresh coriander , stir in half a sachet of butter buds (1/2 syn) and add freshly milled black pepper

CAULIFLOWER CHEESE
----------------------------
Steam a head of cauliflower, transfer to an ovenproof dish.
Melt 100g low low spread or Philly and pour over cauliflower.

Pete's Lemon Chicken (2013)
Serves 2
Ingredients
¼ tsp Chilli flakes
1 Egg
1 tsp Garlic salt
1 tsp Turmeric (for colouring)
1 tbsp. Sweetener
1 tbsp. Cornflour or "Carrs sauce flour" (3.5 syns/2=1.75 syns per person)
2 lemons, washed, zested & juiced
2 tbsp. light soy sauce
100g Long grain rice
125mL Chicken stock
250g Chicken breast, cut into strips
S & P
Garnish
1 Spring onion, finely sliced
1 Chilli, de-seeded & finely sliced

Method
Cook the rice as per the instructions on the packaging.
Mix the egg with the turmeric & ½ tbsp. of the cornflour in a small glass bowl, season with salt & pepper, add the chicken, mix well & cover, chill in the fridge for at least 30 mins.

Spray a wok with frylight, heat up and cook the chicken on a high heat, stirring all the time until cooked, remove from the pan, keep warm, clean the wok & spray with frylight.
Mix the remaining cornflour with the lemon zest, juice, stock, sweetener, soy sauce, garlic salt & chilli flakes. Add to the hot wok & bring to the boil, add the chicken, keep stirring until the sauce has thickened & the chicken is coated.
Plate up with rice & garnish

DEBS BAKED BEAN LASAGNE
Serves 3
2 tins beans
1 tin chopped tomatoes
1 onion chopped
3 cloves garlic
1tsp wholegrain mustard
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tbsp Tom purée
3 hea of cheese.
9 lasagne sheets

Fry onion and garlic until softened, add tomatoes beans, Worcestershire sauce, soy sauce, tomato purée and mustard . Mix well simmer for 7 mins . Layer the lasagne sheets and the bean mixture until used up then grate cheese on top. Cook on gas 6 for 40 mins

CREAMY SMOKED SALMON PASTA. ( Kwise's recipe)

GREEN DAY - 1 HEB & 1 HEA

Ingredients (for 2 -4)
4 Hard Boiled Eggs, chopped
85g (per person) Smoked Salmon cut into strips
30g (per person) Grated Parmesan
170g-200g dried pasta
250g 0% Fat Greek Yogurt
2 spoonfuls fat free fromage frais
1 Tblsp Fresh Chives. Chopped
1 tsp dried dill
Salt & Pepper

Boil the pasta per instructions.
Drain pasta and return to the pan with all the remaining ingredients.
Heat very gently whilst stirring until heated through but not boiling.

Serve
