CHICKEN HARIRA

(moroccan soup dish -yummy and filling)

serves 4
small bunch coriander leaves and stalks separated
2 garlic cloves crushed
1 tsp ginger paste (lazy ginger)
1 lemon zest and juice
2 tsp ground cumin
2 tsp paprika
250g tomatoes chopped
100g bulgar wheat
800ml chicken stock
250g precooked chicken torn into shreds
100g spinach chopped

spray pan with frylight finely chop coriander stalks add to pan with garlic , ginger and lemon zest fry gently for 2 mins
stir in cumin, paprika and cook for 1 min more
add tomatoes, bulgar wheat and stock,
cover and simmer for 8 min til bulgar wheat is just tender
stir in chicken and spinach, let spinach wilt then tear in the coriander leaves. season and add lemon juice to taste
serve



Made this again tonight and was yum. I increased quantities so have some left for lunches too.

Peppers, onions, mushrooms, baby corn, (any veg) Chicken (obviously) tin of tomatoes, schwartz curry spice (mild or hot.. whichever you prefer)


Hubby doesnt like indian curry but all seem to end up tasting indian! any tips??

Cut potatoes into slices , and place into actifry with 3 slices of chopped bacon . Cook for 15mins When cooked place in a single layer into ovenproof dish Whizz up a slice of bread, 1 tbsp of green pesto and a squeeze of lemon juice. Take a bag of salmon fillets or white fish fillets or mix of both and lay ontop of potatoes. Press the pesto mixture on to each fish piece and spray with fry light then bake 20 mins gas 6. Yummy topping

BASH-IT CHICKEN & POTATOES WITH SCARVES ON

Serves 2
For the potatoes

Small potatoes
6 rashers of bacon
Salt & pepper

for the chicken

2 chicken breasts
1 tbsp honey
1 tbsp French mustard
1 tbsp chopped coriander ( I used the frozen type but fresh is fine too)
2 tbsp soy sauce

Preheat oven to gas 6
Peel and boil the potatoes for 15 mins or until just tender .
Meanwhile slit the breasts, but not all the way through, to butterfly them .
Bash with a meat tenderiser.
Mix together the coriander, mustard, honey and soy sauce, in a shallow dish, then place the chicken in to marinate.

Leave for 1 hr if possible.
If no time then leave while potatoes are cooking.

Drain potatoes, cut bacon into strips and wrap around potatoes.

Place into oven dish and spray with fry light, add salt and pepper and bake for 15 mins or until browning.

Place chicken onto a baking tray and bake in oven for 10 mins or until cooked through.

BASH-IT CHICKEN


Serves 2

2 chicken breasts

Leave for 1 hr if possible. Then Place chicken onto a baking tray and bake in oven for 10 mins or until cooked through.

The peppers are simply split in two, spray with fry light, stuff with Philly garlic, and slices of cheese

CHILLI PRAWN & MUSHROOM ROMAINE


romaine lettuce leaves
pack of prawns
1 tsp lazy chilli paste
1 tsp lazy ginger
pinch of paprika
pinch of salt
few leaves of coriander
5-6 mushrooms sliced
1 garlic clove
1 small onion
2 crab sticks


fry light a pan, add onion and cook for a few mins then add garlic and mushrooms, stir in ginger and chilli
when mushroms are cooked add prawns salt and paprika,
cook for 2-3 mins and serve with coriander and chopped crab sticks

71g Philadelphia light (hexb)
Onions
Mushrooms
42g Low Low cheese (hexa)
Pasta spirals





CHEESY PASTA BAKE KANKLES STYLE!!!

Serves 3
210g spiral pasta
1 pack colmans 4 cheese sauce (6.5syns + hexa)
213g philladelphia light with chives (hexb on green only)
126g grated Kerry low low cheese (hexa)

1. Cook pasta
2. Once past nearly cooked, Make up contents of the colmans four cheese sauce as per instructions in separate saucepan
3. Once cooked Add the philladelphia to the colmans cheese sauce simmer for 2-3 mins more
4. Drain pasta and poor into the cheese sauce
5. Poor into an overproof dish (I used individual serving ones)
6. Sprinkle Kerry low low cheese on top
7. Place under grill until cheese starts to brown slightly
8. Tuck in



BROCCOLI AND MACARONI CHEESE
From the quick & easy dinners recipe book

Super simple to make
Serves 4
Ready in about 30 mins
Syns per serving: 4.5 syns on Green & Extra Easy if not using the cheese as HEA choice.

Ingredients:
12 oz/340g dried macaroni
11 oz/312g brocolli florets
4 oz/113g smoked cheese, grated
2 garlic cloves, crushed
1 tsp dried red chilli flakes
9 oz/255g quark
2 egg yolks, lightly beaten
salt & pepper

Method:
Preheat your oven to 200 degrees/gas mark 6. Boil the macaroni in a pan for 10-12 minutes adding the brocolli florets for the last 4 minutes. Drain well & set aside.
Mix together the smoked cheese, crushed garlic, chilli flakes, quark & egg yolks in a large bowl & season well. Add the pasta & brocolli & toss to coat evenly.
Put the pasta mixture into an ovenproof dish & bake for 15-20 minutes or until lightly browned on top. Remove from the oven & serve. Top with a twist of black pepper.

CREAMY PASTA SAUCE
got this pasta sauce recipe from another thread,

cook some mushrooms, onions and courgettes or whatever veg You have to hand, can add some chicken if you want.

Add 100ml chicken stock to your dish and when that comes to the boil remove from the heat and add your quark


MISS HPS PASTA
Dried spaghetti
Onion
Spring onion
Half punnet cherry tomatoes
2 cloves of garlic
Basil
56g parmesan (both my HEA's)
85g low fat soft cheese (HEB)
2 tsp olive oil (3syns)

Cooked the spaghetti, cooked the onion, garlic and spring onion in the oil (I know I could have used frylight and I do most times, but I had only had 1.5 syns all day and fancied using a bit of proper oil), then when they were cooked I threw in the cherry tomatoes to soften. When the pasta was cooked I mixed it altogether and with a bit of the pasta water, then mixed in the low fat soft cheese and parmesan, oh and of course salt and pepper. It was quick (which was good as I was very hungry) and very yummy. I know it isn’t anything exciting and very easy to make, but thought I’d share

SOPHIES YARIBA YARIBA MEXICANO RICE
low fat cooking spray
quorn pieces
1 onion chopped
1 yellow pepper, chopped & deseeded
1 carrot chopped finely
2 garlic cloves (or garlic granuels work fine)
1 tsp paprika
pinch of chilli flakes
1 tsp dried rosemary
6oz (175g) brown basmati rice (although long grain works fine too)
1 can of chopped tomatoes
1 can of red kidney beans in chilli sauce
salt & pepper

Lightly coat a casserole dish with low fat cooking spray and brown the quorn pieces with the onion, pepper and carrot and fry for 4-5 mins

Stir in the garlic, spices, rosemary, and rice and fry for 1 minute, add the tomatoes and 350ml (12 fl oz) boiling water

Season well, bring to a simmer and cover. Reduce the heat to a very low setting and cook for 15 mins.

Stir in the kidney beans and cook for another 5 - 10 minutes
 
Tamarind chilli chicken which is lovely. It's 2½ syns
Serves 4

8 pieces of skinless chicken
Frylight
1 onion chopped
1 red pepper chopped
1 red chilli chopped
2 garlic cloves chopped
1 tablespoon tamarind paste
1 tablespoon sweetner
1 teaspoon ground tumeric
2 tablespoons plain flour
450ml chicken stock made with chicken bovril
salt & pepper
Coriander to serve
Spray frying pan with frylight and brown chicken to seal. Once brown remove. Add onion to pan & fry till lightly browned. Add red pepper chilli & garlic cook for 2 mins. Mix in tamarind, sweetner & tumeric. Cook for another minute then mix in flour. Gradually add stock and season to taste. Bring to boil. Put chicken into slow cooker and add sauce. Cover & cook on low for 8-10 hours (if chicken has bones) or 5-6 if breasts. Serve with coriander. Yummmmmm.

Tamarind can be found where the herbs and spices are.



CHICKEN IN A POT
Syn free on Red
2 carrots sliced
2 onions sliced
2 celery stalks sliced
3lb whole chicken
1 tsp salt
1/2 tsp black pepper
1/2 cup water or stock (Bovril)
1/2 tsp dried basil
Put carrots, onions, celery into slow-cooker add whole chicken.
Top with salt, pepper and water or stock. Sprinkle basil over top.
Cook 8-10 hours on Low or 4-5 hours on High
 
TOMATO KETCHUP

3 tbs tomato puree
3 1/2 tsp vinegar
1/2 tsp sweetner
1/4 tsp salt (slightly more or less depending on taste)
pepper to taste

mix all together
nuke on full for 30 seconds to let flavours mix
tadaaa.... ketchup




or alternative recipe
1 onion
2 garlic cloves
2x 400g chopped toms
2 tsp cinnamon
2 tsp celery salt
2tsp english mustard
2tsp ground white pepper
4 tbsp sweetener
9fl oz/255ml red wine vinegar
1 tbsp worcestershire sauce

Finally chop onion and crush garlic. Place ingrediants into a saucepan and bring to the boil. Reduce heat and cook gently for 40-45mins, stirring occasionally

Remove from heat, season with salt and allow to cool. Blend the mixture in a food processor until smooth and seive into a bowl

Transfer into sterile bottle, keeps for upto 3 weeks in the fridge




TRACYS OH SO SPECIAL GARLIC SAUCE
The garlic sauce is just fat free Greek yog mixed with a garlic clove and a sprinkle of dried mint and a little sweetner.


Enjoy It does make enough for 4 good portions, I like it with wedges, corn on the cob and a dollop of pretend sour cream! (Fromage frais with salt & pepper and garlic!!)
 
LAMB MOUSAKA ROLLS

syn free if using cheese as hea, and frylight, and serving 2 people

Makes 8
Ingredients
2 large aubergines
6 tbsp olive oil, for brushing - use fry light to make it syn free
For the filling
1 small onion, finely chopped
fry light
400g ground lamb
2 large tomatoes, finely chopped
1 tsp ground cumin
½ tsp paprika
½ tsp mild chilli powder
½ tsp oregano
Small bunch of fresh parsley, leaves only, finely chopped
2 small tomatoes, thinly sliced
56g Parmesan cheese, grated
To serve
300g fat free natural yoghurt
1 tbsp chopped mint
Method
1. Preheat the oven to 180C/Gas 6.
2. Thinly slice the aubergines lengthways, about half a cm in thickness. You should have 8–10 slices.
3. Arrange the slices on a baking tray and brush/spray generously with oil. Place in the oven and roast for 10 minutes, until soft and golden. Remove from the oven
and allow to cool.
4. In a large frying pan, sauté the onion in frylight for two minutes, until soft.
5. Add the lamb and cook for a further 4–5 minutes, stirring to brown on all sides. Add the tomatoes, cumin, paprika, chilli and oregano, and season to taste.
6. Simmer for 10 minutes, until any liquid has mostly evaporated and the mixture is thick. Remove from the heat, stir in the fresh parsley and allow to cool.
7. Preheat the grill to medium/high.
8. Take a cooled slice of aubergine, place a spoonful of the filling on one end, and carefully roll it up.
9. Arrange the aubergine rolls seam side down on a grill pan. Place a slice of tomato, or half a slice if that fits better, on top of each roll, and sprinkle with the
Parmesan. Grill for about 2 minutes, until the cheese is golden.
To serve
Place the yoghurt in a bowl and mix with the mint. Serve with the moussaka rolls, straight from the grill, and salad.
 
Watermelon and cherry tomato salad

Ingredients
For the salad
½ medium watermelon, peeled and cut into chunky cubes
200g cherry tomatoes, halved
Small bunch of fresh mint, leaves only
200g feta cheese, crumbled
100g almonds, lightly toasted and crushed
1 teaspoon toasted sesame--------syn if used.
Method
1. Combine the salad ingredients in a large serving bowl.
2. Mix together the other ingredients and sprinkle on top of the salad.

KANKS MA'S CHICKEN AND-BACON PATE
(Syn Free - Red or EE)

Ingredients:-

8oz chicken livers.
1 onion chopped.
1 clove garlic crushed.
1/2 teaspoon mixed herbs.
Salt & black pepper.
4oz bacon chopped.
Tub of very low fat fromage frais.

Method:-

Put onion, garlic & herbs in pan and fry in fry light until the onion is soft, add liver and cook for about 7 mins.

Put everything in blender and blend until smooth.
Add fromage frais a spoonful at atime until the consistency is the same as shop bought pate.
This is pure heaven...

blancmage/ jelly mousse whatever u wanna call it.
Make up a sugar free jelly (60p for twinpack ) to half pint with boiling water, when cool Mix a tub of quark in and pop into fridge.
Lovely I've tried the strawberry , orange and raspberry.
If you don't have quark use a couple of matching mullers. The mandarin with the orange jelly is nice.


MAGIC PORRIDGE
- scrum tiddlyyum. Give it a go if you haven't.
Basically add a muller any flavour ( can use other low fat yogs) to 28g porridge oats ( a b choice) mix really well and place in fridge overnight. When you take it out in morning it will be creamy and yum. You can eat it warm or cold I preferred it cold as it was too sweet wen warm

CHICKEN HOT POT

2 large chicken breasts or 3 small diced
1 onion diced
2 crushed garlic cloves
1 1/2 chick stock cubes
1 veg cube
250ml milk
1/2 tsp each rosemary @ thyme
Salt pepper .
3 medium to large potatoes
1-2 carrots
Big handful of peas


Fry light pan add onion & garlic to soften, add chicken and brown
Add milk and herbs and stocks , salt and pepper.
Leave to simmer

Meanwhile add 1-2 carrots diced to a pan and boil, when almost done add peas.
Add veg to chicken mix and stir through.
Pour into a casserole dish
Peel and thinly slice potatoes and place ontop of chicken
Bake gas 7 until potatoes are cooked and brown
